Cranberry orange scones

Ingredients
  • 1½ cups flour
  • 1½ tsp. baking powder
  • ¼ tsp sea salt
  • ⅓ cup organic sugar
  • 6 Tbsp cold butter, diced in small cubes
  • ¾ - 1 cup roughly chopped fresh cranberries
  • ¼ cup milk
  • ¼ cup citrus juice
  • Zest of 1 large orange or 2 tangerines or clementines
Instructions
  1. Preheat oven to 425 degrees.
  2. In a large mixing bowl, add flour, baking powder, sea salt and small pieces of butter. With your hands, rub the butter into the flour until the mixture becomes coarse crumbs.
  3. Rub the orange zest into the sugar. This will bring out the citrus flavor even more.
  4. Add the citrus sugar, cranberries, milk, and orange juice. With a fork slowly stir 15 - 20 strokes being careful not to overmix your dough.
  5. Butter a cookie sheet and press the dough into a large circle on the cookie sheet.
  6. Bake until lightly browned (about 15-20 minutes).
  7. Cut into 8 wedges when done.
