Skillet granola ~ vegan and juice-sweetened

Ingredients
  • 1 cup oats, organic if possible
  • Juice of 1 large orange
  • 2 Tbsp coconut, unsweetened
  • 2 Tbsp flax, ground
  • 2 Tbsp almonds, ground
  • 2 Tbsp walnuts, ground
  • pinch of sea salt
  • ¼ cup raisins, organic if possible
Instructions
  1. In a large nonstick skillet, add oats and coconut.
  2. Slice orange in half and squeeze juice over the oats trying to cover the oats with juice.
  3. Stir oats to coat with juice.
  4. Sprinkle with desired amount of sea salt.
  5. Over low heat (3-4) stir oats and toast them. Continue toasting them over low heat stirring as needed for about 10 - 20 minutes until toasted. You can also turn down the heat to 1 or 2 and stir occasionally if you don't have a lot of time to man the burner.
  6. While oats are toasting, use a coffee grinder to grind flax, almonds and walnuts (each separately). If you don't have a coffee grinder use flax meal or omit flax, and grind your nuts in a food processor.
  7. Add flax and nuts to last couple minutes of cooking time otherwise the flax will burn.
  8. Remove from heat and stir in raisins.
  9. Eat plain or with almond milk. Also good with a sliced apple, or as a grab and go snack mixed in with other nuts and seeds.
