Vegan energy bites

A tasty treat while on the Daniel Fast. They're also vegan, dairy-free and gluten-free.
  • 1⅓ cups oats, organic preferred
  • 1 cup unsweetened coconut flakes (I buy in bulk at Whole Foods)
  • ½ cup natural peanut butter (no added sugar or molasses)
  • ½ cup crushed walnuts, any nut or ground flax seed
  • ½ cup date honey (link to recipe in post) or maybe mashed ripe banana would work
  • ½ cup raisins, organic preferred
  • ½ tsp sea salt
  1. Mix all ingredients in a big bowl.
  2. Roll into small balls and place on wax paper.
  3. Refrigerate to harden and chill. Keep stored in fridge.
  4. Makes 28 balls.
