A kitchen mistake sometimes proves to be a blessing in disguise. Don’t you love when that happens? Last month I set about to make pizza dough, but instead of using my pizza dough recipe I ended up making my bread dough by accident. Oops!! I was pretty sure it would still end up tasting good…but what a nice surprise that I think it actually tastes better. And it made double the amount of dough, which meant I had more than enough for my freezer. Enough for an extra family meal, and “the blessing”…..for me to have a personal pizza anytime I want!! Oh happy day!
And so my latest addiction was born….these easy personal flatbread pizzas. I’ve blogged about flatbread pizza before, but now that the dough is so readily available, I find myself eating them a lot. Of course you can top them with ANYTHING you want. I tend to gravitate toward the gourmet pizzas I fell in love with all those years ago when I lived in Hawaii. It was my first time eating at California Pizza Kitchenor CPK as it’s affectionately termed. It was one of my favorite places to eat, and my pizza of choice was the Five Cheese and Tomato with fresh basil. Mmm….
For this particular pizza I wanted to create a BLT pizza. I also had some chicken breast that I made into homemade chicken parmesan-style nuggets and decided to throw those on too. I love crispy crusts which is why you won’t see much of a crust on any of my pizzas. Good if you are trying to cut down on carbs. This was my pizza right when I pulled it out of the oven Friday night…..
Then I topped it with fresh chopped living lettuce and tomato, and drizzled with this amazing special sauce that I am finding more and more uses for. Each bite was incredible!! Chicken parm-style nuggets, nitrate/nitrite free bacon, minced garlic, fresh basil, 3 different cheeses, lettuce, tomato & a bit of special sauce. Seriously….you can’t go wrong with this. What would you top your pizzas with?
- Pizza dough
- Minced garlic
- Olive oil
- Crispy bacon, crumbled
- Chicken nuggets, sliced
- Mozzarella cheese, small bits
- Gouda cheese, shredded
- Romano cheese, shredded
- Lettuce, chopped
- Fresh Basil, chopped
- Tomato, chopped
- Special white sauce
- Preheat oven to 480 degrees.
- Tear off a square piece of foil. Place swig of olive oil on it and rub around.
- Press ball of dough very thin onto foil. Spread with minced garlic. Put in oven for 2-3 minutes while still preparing toppings.
- Top pizza with chicken, bacon, cheeses, and basil and put back into oven. Cook for another 4-5 minutes until cheese is bubbly and crust is crispy.
- Pull out pizza and top with chopped lettuce, tomato and drizzle special sauce on top.

Oh my heaven. I want that so bad. I love salad on pizza CPK style!! I just successfully made my own ww pizza dough last friday (before I realized my oven was working) so in the freezer now. I want to whip up some flat breads like this!

When I read your title I totally identified with you! I’ve been making pita bread pizzas and have been finding it so easy to make them several nights in a week in several different ways – I now have another way to try! 🙂

That BLT pizza looks absolutely incredible. I know that, after one bite, I would wouldn’t be able to stop eating it.

Hi Denise! I call it Kitchen Kismet really when you make a mistake like this that works out so well. That is how I started making home made mozzarella cheese! I simply over heated my ricotta curds! 🙂 Oh the disasters I could share with you about making home made pizza though! LOL I once almost burned down my house!
