Food Blog Forum Orlando ~ An Unforgettable Experience!!

Wow!! Where to start….my mind is spinning from the many incredible moments over the weekend. I have SO much to share and SO much to say, but the weekend was non-stop from start to finish and I found myself needing time to process it all. I’ve tried to sit down and get to this post several times over the past few days, but I just couldn’t seem to write about it yet. Normally I need to write to process, but this time I think I needed time to reflect first…a few days to come back down to reality. AND I needed a quiet house…that’s hard to come by in a house with 3 girls! Hopefully I’ll be easier to follow now that I’ve done that!!

I shared with you all one of the things I was MOST excited about was meeting my local food blogger friend, Michelle of The Domestic Mama, in person! And having the time to get to know her better, and really share our food blogging experiences with each other. When we finally met Friday afternoon, it was like getting together with an old friend…we didn’t miss a beat. We had a 2 1/2 hour drive to fill up, and funny enough, I don’t think either of us remember how we actually got to our destination…that’s how FAST time went! Did I mention how SUPER excited we both were?

First up on our agenda (after a brief check in at the Rosen Plaza Hotel) was the meet and greet at Whole Foods Orlando. You know how much I love Whole Foods!! And though I had fairly high expectations of our evening, I was stunned at all the effort put into this night. Words just don’t do it justice, so take a peek…..

Five delicious appetizers, mountains of Kerrygold cheeses, the infamous cake of Brie, the unending flow of wine, not to mention a crème brulee bar. Oh yeah, lets not forget about the raspberry and chocolate mousse cups. Did you all know these are some of my very favorite desserts…I always buy chocolate mousse and crème brulee when I’m visiting France in Epcot!!

They really went ALL out for us, and we finished the evening feeling pampered and satisfied. Thank you Whole Foods for all the yummy goodness and hospitality! The evening zipped by so fast…meeting many food blogger peeps and snapping pics, that it wasn’t till much later I realized I never did sample that Brie cake (bummer!)

About those food blogger peeps…we were too busy chatting to get any pics that first night (they’re coming), but I finally got to meet some of my long time Twitter friends: Julie of The Little Kitchen (and main organizer of this wonderful event!!), Aggie of Aggie’s Kitchen, Tina of My Life as a Mrs. and Joan of FOODalogue. Both Tina and Joan live in my area, and Tina right around the corner (literally) which is really cool. We even attended the same church for over a year, didn’t know each other and Tina watched my baby in the nursery before I even started up my food blog. Small world, huh? Of course all the foodie peeps were as friendly in person as they had been in cyberspace!

I also met Susie & Jeff, Asha, Binky, Rachelle, Adam & Joanne, and Julie of the Alkaline Sisters. And last, but not least…our hostess Jaden of Steamy Kitchen! You can read her recap of the event here. Jaden is super friendly, fun and down to earth. I knew I was going to like her!!

A few of us were there down to the very end as we just didn’t want the evening to end. Michelle and I had a few things to pick up at Whole Foods so we wandered around chatting about our night. And our slumber party continued back at the hotel, donning pj’s and pulling out laptops. We won’t even go into our Wi-fi situation (non-existent), and being tethered to an ethernet cable for the online session we wanted to have together…we have much to learn from each other, and wanted to get started on that. But the hotel made up for it in many other ways (a clean room, comfy beds, a mini fridge, spectacular view from the 6th floor, close proximity to our events, a great rate and walking distance to Pointe Orlando).

Saturday morning, bright and early we headed over to the Rosen College of Hospitality Management for our blogging sessions! You could tell all the bloggers were wide awake and ready to learn. Outside the classroom, there was a nice display of coffee and a variety of tea to try, as well as plenty of water. What a nice touch! As soon as you entered the room, you could see the stack of prizes at the front of the room for the giveaways and all the cool SWAG bags arranged at the back of the room.

When I first walked in, I got to meet another long time Twitter friend Merry-Jennifer of The Merry Gourmet. Another super friendly blogger! She and Aggie are also Twitter friends, and I find them both very inspiring and we all seem to have quite a bit in common! I don’t have a picture from that morning, but this is me and Merry-Jennifer that night at the after party.  And pictured above in the bottom right corner is Jessica of The Novice Chef and Jaclyn of Food Plus Words.

The morning sped by and before we knew it, it was time for lunch! We had a catered lunch of roast beef and other meats, cheeses, rolls, salads and cookies, and a chance to sit and chat. I met Katie of Katie’s Cucina during lunch, and it was great to have some down time in the middle of the day. But I know we were all SUPER excited about the afternoon photography sessions with Helene of Tartelette. I picked up so many helpful tips about lighting, food styling and camera equipment.

This incredible day of learning and gleaning went by way too fast! Our talented list of speakers included: Jaden and Scott Hair, Helene Dujardin, Dawn Viola of Wicked Good Dinner, Lindsay Landis of Purr Design, Peter Scott, Jeff Houck ~ Food writer for The Tampa Tribune, and Heather McPherson ~ Food editor for The Orlando Sentinel. They were all SO very helpful and giving of their knowledge in their respective fields. Thank you again for sharing with us!!

To sum it up…it was a well organized day (thanks Julie and Dawn), VERY informative with many AWESOME prize giveaways. I even won a prize….check it out….pretty cool, huh?

After a long day of learning, I was a bit tired. But there was no rest for the weary…we had to freshen and change at the hotel and head out to the after party at McCormick & Schmick’s. After a few trips around the mall (the GPS didn’t take us straight to the valet in front of the restaurant), we arrived fashionably late to the party. Imagine our surprise and delight to learn that they had closed the entire restaurant for our affair, and we were treated like VIPs for the night. There was a huge spread of sushi, shrimp, kobe beef sliders, sangria, wine, and cosmos. I finally was able to meet a few more Twitter friends that evening: Renee, Lael and Brie.

I got to spend quite a bit of time getting to know Helene a lot better, and I have to say she is a true gem. She is SO passionate about her photography and the cookbooks she photographs. She is VERY talented, but super humble.

Again Michelle and I were a few of the last ones there, and were busy chatting it up with Julie and Helene when the valet brought our cars around. We drove back to the hotel discussing our evening (we were still trying to wrap our minds around it all), and our plans to go to IKEA the next day before heading home (Michelle had never been to IKEA, and I spotted one on our multiple trips around the mall LOL!! You can read about our Ikea trip here.) Once back to the hotel…we flirted with the possibility of crashing a prom in progress, and then we realized we were famished (too much talking, not enough eating). So we decided to walk across the street in search of a late dinner. Another late evening, being able to wake up without an alarm and then a bit of shopping and lunch at IKEA was a nice way to wrap up an AMAZING weekend!

Is it too cheesy to say that Food Blog Forum Orlando for me was a life-altering event? I know I’m not over-thinking this. I don’t even know how to put this into words, but meeting all of the wonderful food bloggers I met, and having all of that creativity and ENERGY in one room really made an impact on me. Food bloggers are a unique group of people…all walks of life, all ethnicities and cultures, and a WIDE spectrum of ages, but we all have one central thing in common FOOD!!

And to further clarify FOOD…I don’t just mean food, I mean LOVE of food, creating it, sharing it and using it to CONNECT with others! It is really a vital part of the human experience. Don’t get me wrong, I have MANY people in my life that I share this passion with, but walking into my first food blogging event was just like finding the right pair of shoes…a perfect fit! I hope I get to the chance to attend many more in the years to come!!

Food Blog Forum ~ An Orlando Getaway!!

The excitement I feel is filled to overflowing!! Never in my wildest dreams would I think I’d be able to attend a food blogging conference. As a mom of 3 with a hubby who works fairly long hours….as much as a getaway to BlogHer Food in Atlanta would be GREAT…it’s just not gonna happen. Not to mention the ticket cost, the far away travel, the work days that I’d have to piece together childcare…the list is endless and depressing. But hey, that’s okay. I love what I do!!! I knew that one day I’d get find something closer to home and more in my budget.

Then along came the TWEET that made my day!! Back in late February, I saw a tweet announcing that Jaden Hair of Steamy Kitchen would be hosting a Food Blog Forum right here in her home state of Florida!! Yay….and Orlando is right in my backyard! A day long “build your BEST blog” seminar in my budget too, nonetheless….$99 for a 1 day seminar, and a pre and post party to attend. WOW!!! I felt like I’d hit the jackpot!! A day to spend with fellow food bloggers (many local Floridians) learning about my passions and eating good food.

Not to mention a LONG-awaited break from being a “mom.” Let’s face it…as much as we LOVE our children (and we DO), we mamas all NEED a break to recharge, renew, refresh and come back ready to tackle anything. I think the almost 4 years I’ve waited (to have some mama/girlfriend time away) may have been TOO big of a stretch, but that just further shows what a GREAT BARGAIN I’m getting out of my $99. Did I mention that this $99 includes the pre and post party and most of my food? Yeah…I’m beyond giddy!! If a picture were worth a thousand words…this picture would just about sum up my motto for the weekend…

But wait…it gets BETTER!! I know….how in the world could this get any better? Of course, I’m gonna fill you in. I get to share the trip with a fellow local food blogger Michelle of The Domestic Mama!! We get to drive up together sharing the expenses of gas and lodging (there’s that frugal nature again…ok, who am I kidding…it’s as much about the needing girlfriend and fellow mama time!!), further get to know each other and FINALLY MEET!! We’ve gone from forum to twitter to email to Facebook, but haven’t had a chance to hook up in real life yet.

Crazzzyy I know, but with both of us being busy mamas….that’s just how the whole thing played out. Hubby thinks it’s better that we didn’t get to meet up before hand. I think he’s almost as excited as I am that I’m meeting my FIRST “in-real life food blogger” AND attending my FIRST “food blog conference.” I know I’m blessed…he’s that cool! He totally gets my passion…that it’s not ONLY cooking and creating, but sharing it with others through my blog and getting to meet others that like to do the same. Even though blogging has really taken off in the past 5 years, I still get strange looks when I say I have a FOOD blog. LOL!! (I really need a plug-in that allows me to do smileys on here…it drives me crazy that I can’t!)

So let me jump into the details….

I’m attending Food Blog Forum Orlando this weekend. I know some of you are curious what the heck a Food Blog Conference is…I know I used to be! I’ll be leaving tomorrow afternoon April 8th and coming home Sunday afternoon April 10th. My mom has blessed me IMMENSELY by coming over before hubby gets off work in order to watch the girls so I could get up to Orlando for the pre-party Friday night at Whole Foods. Yay…you know I LOVE Whole Foods!!

My hubby and girls will have a FUN-filled weekend complete with sneaking off to buy another pet McDonalds and to buy sugary cereal I’m sure. All those fun things daddies get to do!! I’m NOT offended that my girls are as excited as me about my leaving…I was a kid once. They want daddy time, but I know they are also excited for me. Especially my 12 yr old daughter…she’s wanted to know every detail and it’s been fun sharing this with her. Long-winded….back to the details….

Of the seminars, I’m most excited about Blog design,Optimization and Usability and Finding your Composition, Styling voice and Light: food styling/food photography. Don’t know who I’m kidding…I’m interested in ALL of them!! The wrap up party on Saturday night is at McCormick and Schmick’s seafood restaurant. I’m still excited about all the meals I’ll be eating on my own….with no worries of fixing the 3 year old’s plate everyone’s plate first. If you’re interested in following our adventures this weekend, I’ll be live tweeting with the hashtag #FBF (if that changes, I’ll let you know). On Twitter I’m @CreativKitchen, and if you’re new to Twitter it REALLY helps to download the FREE Tweetdeck. Twitter  makes much more sense that way. I’ll also be updating Creative Kitchen on Facebook as well. Yeah, I’m kind of a social media addict…don’t worry, I’ll be having a great time….I just like to “share” it with others LOL!!

Black bean corn salsa…perfectly portable for the beach or boating!!

With summer right around the corner and on the heels of my CLEAN eating post, I wanted to share with you something I threw together a few years ago. Literally threw it together without much thought, and it’s been a staple in our home ever since. It fits the bill for easy, quick, healthy and frugal. I cannot count the number of gatherings I have taken this dish to, and how often I’m asked the recipe.

This salsa is SO refreshing, so light…a tad spicy (or a lot). We take this to the beach a lot, and my girls come running when we pull it out of the cooler. So grab some organic tortilla chips, pull up a beach chair, start munching and help us CELEBRATE Creative Kitchen’s 100th post!!

Black Bean Corn Salsa

2 cans organic black beans, drained & rinsed
1 (or 2) cans organic corn (your preference), drained
1 can mexican rotel or homemade salsa or diced tomatoes & cilantro
1/3 sweet onion (or red) diced small
Juice of 1/2 lime
Pinch sea salt

Add all to bowl and stir well. Refrigerate until ready to serve. If you make this the night before, the flavors have more time to meld, marinate and do “their thing.” Serve with tortilla chips. We buy the Kirkland brand organic tortilla chips at Costco for $4.49 a bag. They taste wonderful, made with non-GMO corn and a staple in my house with 3 growing girls. These tortilla chips also help me on AWANA night…many times Awana night becomes nacho night or tuna sandwich night. We just need something QUICK on those nights.

Can I remind you again how FRUGAL this salsa is? You’re looking at not much over $4 for the ingredients. Just thing how much some of those small jars of salsa are…this one makes a whole bowl full. It also has the added protein provided in the black beans. Have you noticed how much we love black beans around here?? They are definitely a staple. Of course now that I LOVE fresh tomato, I would add those in also. Did I mention my favorite color is COBALT blue? Which means I love, love, love my cloth napkin and serving spoon in this picture. I made that serving spoon in my Mops (Mother’s of Preschoolers) group one year!!

The plight of a food blogger and CLEAN eating

Lately I’ve noticed there’s a tug of war continually going on inside me. It’s really only been in the past few months, but it has taken me completely by surprise! Over the years, my husband and many of my friends have admired my willpower when it comes to cutting out sugar or junk….that when I’m focused and determined to eat a certain way, I have no problem turning down sweets or doing without. That’s why this is starting to become an issue for me. Let me explain….

I function best when following MY “clean eating” regimen, but I’ve come to realize that “FOOD” blogging is a lifestyle that focuses on FOOD. I love focusing on food as much as the next person…I’m a self-declared foodie… always on the lookout to discover new foods. I love learning new things and flavor combinations, and reading about food, cultures, travel and food stories. And food really isn’t the issue…I still eat good food, probably BETTER food when I’m eating CLEAN.

But I’ve recently become aware that EVERY time I turn around, there are delectable desserts being dangled in front of my face…blogs being fed to me through many online sources…stumble upon, facebook, twitter, blog subscriptions, etc. These sweets, desserts and chocolate usually wouldn’t lure me in, but if it’s a dessert I’ve never attempted to make, then I start getting the inward chant to create. The food blogger in me wants to rise to the challenge!

Some of these recipes are touted as being difficult…like the elusive French Macaron, and I am inspired to replicate them! In fact, that one is on my ever growing list. But here is where my willpower wavers. I have no issues with store bought goodies or processed foods, but if I’m making sweets then I want to sample them…not once, but over and over again. Because seriously…we all know they’re good…nothing compares to homemade desserts!

I am in AWE of all the bakers and bloggers who focus on sweets…they make/bake/create a zillion desserts it seems, and appear to have an enormous amount of self-control. I am in great AWE of you!! If I could master that, my family would be forever grateful…though possibly quite addicted to sugar.

When I’m trying to focus on my CLEAN eating, there are certain things I don’t make. Maybe after a couple months I can add something periodically, but in the beginning I must abstain….other than a bit of dark chocolate here or there. Antioxidants, you know (wink, wink)!!  So just throw the clean eating out the window you say? If you love to make sweets and eat them…go for it! Well, in the ideal world I could eat like that on a regular basis without my clothes getting tight or my energy level faltering, but we all live in the REAL world. Sugar is just not our friend.

Let me share with you my definition of clean eating, and the benefits I experience when I’m focused on eating clean. I know that everyone has a different definition of CLEAN eating, and that’s okay…we’re all different.

When I eat clean, I follow these top 10 guidelines and they work for me:

1) No white flour.

2) No sugar (I don’t believe in sugar substitutes like aspartame, but do use pure maple syrup and honey sparingly).

3) Limit my carbs (which are all whole grain, no refined) to 1x a day, if that.

4) No refined carbs (which basically means no white flour/sugar)

5) Drink my green smoothies daily.

6) Up my water intake.

7) Eat more salads.

8) Concentrate on being aware of my hunger cues….when I feel satisfied, stop eating.

9) Wait for the stomach to growl…or when I am really hungry to eat. Lately people are taught to “graze” all day which means we are scared of “feeling” hungry. But nothing is wrong with the feeling of hunger. In fact, have you ever noticed that food tastes better when you’re hungry, and starts to lose that flavor punch as you fill up? We’re actually designed so that we won’t overeat!

10) Fit exercise back into my regular schedule. I feel better when I am exercising…getting fresh air and those endorphins flowing. I actually get more done when I am active. Don’t you?

The BENEFITS I receive when I follow my top 10 guidelines are:

1) I have much more energy!! I mean A LOT more!!! Which is really important when you aren’t a 20-something anymore. As a mom of 3 active girls…I NEED a lot of energy. Who doesn’t?

2) My mind is clearer. I can think straight…I seem to process things better…which means I’m calmer and more patient.

3) I feel lighter because my body is not weighed down with all the stuff it doesn’t need. Since I’m adding good fuel, it burns CLEAN. My body knows what to do with it, and is much more efficient.

4) I feel happy! There’s no doubt in my mind that I am a happier person when I am following my guidelines. I’m a positive person anyway, but my outlook is even brighter and I feel deeply satisfied. It really is soul pleasing to eat this way.

5) I get more done around my house, with my children and have an overall sense of accomplishment. I feel like I can tackle anything.

6) EASY weight loss is a benefit if that is my goal, and maintaining weight is effortless.

So what’s a food blogger to do? I don’t have the answer yet. Baby steps I guess. I’ve been back on my CLEAN eating regimen for a few weeks now, and I have lost about 5 pounds. Pretty good considering I haven’t been able to been motivated enough yet to add the exercise back in…though I sure do NEED it…it more ways than one. I like that weight loss is effortless when I follow my guidelines.

No counting calories or points. It doesn’t feel restrictive because the secret is…when you are off white flour (refined carbs like white rice, white pasta, white bread etc)…you don’t crave sugar. See where the dilemma is…I’m not craving sugar, I’m drawn to the challenge of making “said” food, but then I know when I make it I won’t have the self restraint. Make sense?

Lemon cranberry muffins & our favorite breakfast options

Lemon Cranberry Muffins

Well it’s hard to top last week’s post!! I have nothing funny or humorous to share about these muffins. I can however, fill you in on how things are going with the rabbit. Actually she’s a bunny…only a few months old, which makes it that much harder to resist falling in love with her. I keep telling myself that when they grow tired of her, it will be easy for me to find a home and part with her…but honestly she seems worth the effort for now.

She’s VERY well-behaved, loves to interact with us, doesn’t have accidents when we let her have a little roaming time…and as you’ve seen…she’s SUPER ADORABLE!! And you can’t beat the fact that so far…hubby is SO in love with enamored of her that he does all the “work.” He said he doesn’t want to give me any reason to boot her out. Plus he really likes doing it….he’s rather pet crazy at the moment. If you have no clue what I’m talking about, you can read last week’s post here. I still can’t believe we have a bunny for a pet! Crazy!!

So on to these muffins. I can’t remember where I stumbled upon this recipe, and normally I create my own muffins, but this one sounded way too good to pass up. I know baking is an exact science, but I feel like I have a little more leeway when making muffins. In fact, there is a “create your own muffin formula/recipe” in The Complete Tightwad Gazette (a book near and dear to my heart that I referenced in my Puffy Pancake Post) in case you’re interested. I really changed these quite a bit, but they were my starting point so I’m linking below.

Lemon Cranberry Muffins (adapted from Taste of Home) ~ Yields 24 muffins

4 1/2 cups freshly ground whole wheat flour*
1 1/2 cups sugar, sucanat or honey granules
2 Tbsp + 2 tsp aluminum-free baking powder
1 tsp sea salt
3 eggs
1 1/2 cups whole milk
3/4 cup coconut oil or melted butter
2 lemons (juice and zest)
3 cups cranberries (frozen or fresh), diced or halved

Preheat oven to 400 degrees. In a large bowl stir together flour, baking powder and salt. Place sugar in a small bowl, add lemon zest and rub zest into sugar until fragrant. In another bowl, beat eggs, milk, melted butter or oil and lemon juice. Slice cranberries in half (or dice).

By hand, add dry mixture to wet mixture and stir until just combined. Do NOT over mix. Fold in cranberries gently. Grease muffin pans…this is something my girls are happy to do for me. Using your ice cream scooper, scoop batter into each cup about 2/3rds full. I find using the ice cream scooper is less messy and helps to have an even amount in each cup.

Bake muffins for 18 – 20 minutes, and then cool in muffin pan on a cooling rack if you can wait that long. These muffins are quite addicting, and a favorite around here.

The original recipe only made 12 muffins. With a family of 5, making a batch of 12 muffins is a complete waste of my time. They are scarfed down in no time, and looking for more! These girls seem to stay hungry, and keeping them fed can be a full-time job…can I hear an Amen? Save yourself some trouble, and always double your muffin recipe. With the *whole wheat flour, I sometimes substitute part of that with freshly ground oats. I’ve mentioned before that I use my coffee grinder to grind my oats…right on the spot. VERY easy!!

If you are new to cooking from scratch, and used to using box muffin mixes…homemade (from scratch) muffins are an easy way to get started. They really don’t take much longer to whip up, and the taste more than makes up for the extra few minutes. Not only that…you know what you’re putting into them…no unpronounceable ingredients, and it’s definitely a money saver when you cook or bake from scratch. If you’re looking for alternatives to boxed, sugary cereal…then muffins are a great alternative as well. When I make this double batch, they last most of the week for breakfast or snacks (or I freeze half and make a different type of muffin, freezing half of those). In other words…you can make 2 types of muffins, double batches of each on Sunday, and freeze half of each type for another week.

There are SO many options to a cold cereal breakfast. Our breakfast rotation consists of buttered toast and fruit (if we’re having a heavier brunch-type meal for lunch), muffins, green smoothies, omelettes, eggs/toast, homemade granola, oatmeal, pancakes, french toast, and yogurt with fruit. Now I don’t make these things everyday…but because we homeschool, we have the luxury of a smaller breakfast with a cup of hot tea followed by a bigger brunch around 11 or 12. If I’m making omelettes or pancakes…or something a bit more time consuming, then we are eating it a bit later. They’ve generally had toast/fruit or muffins or yogurt or granola, etc to hold them. Make sense? At least half of these breakfast options my girls can make or get for themselves, and my 12 yr old can even make eggs.
