Black bean corn salsa…perfectly portable for the beach or boating!!

With summer right around the corner and on the heels of my CLEAN eating post, I wanted to share with you something I threw together a few years ago. Literally threw it together without much thought, and it’s been a staple in our home ever since. It fits the bill for easy, quick, healthy and frugal. I cannot count the number of gatherings I have taken this dish to, and how often I’m asked the recipe.

This salsa is SO refreshing, so light…a tad spicy (or a lot). We take this to the beach a lot, and my girls come running when we pull it out of the cooler. So grab some organic tortilla chips, pull up a beach chair, start munching and help us CELEBRATE Creative Kitchen’s 100th post!!

Black Bean Corn Salsa

2 cans organic black beans, drained & rinsed
1 (or 2) cans organic corn (your preference), drained
1 can mexican rotel or homemade salsa or diced tomatoes & cilantro
1/3 sweet onion (or red) diced small
Juice of 1/2 lime
Pinch sea salt

Add all to bowl and stir well. Refrigerate until ready to serve. If you make this the night before, the flavors have more time to meld, marinate and do “their thing.” Serve with tortilla chips. We buy the Kirkland brand organic tortilla chips at Costco for $4.49 a bag. They taste wonderful, made with non-GMO corn and a staple in my house with 3 growing girls. These tortilla chips also help me on AWANA night…many times Awana night becomes nacho night or tuna sandwich night. We just need something QUICK on those nights.

Can I remind you again how FRUGAL this salsa is? You’re looking at not much over $4 for the ingredients. Just thing how much some of those small jars of salsa are…this one makes a whole bowl full. It also has the added protein provided in the black beans. Have you noticed how much we love black beans around here?? They are definitely a staple. Of course now that I LOVE fresh tomato, I would add those in also. Did I mention my favorite color is COBALT blue? Which means I love, love, love my cloth napkin and serving spoon in this picture. I made that serving spoon in my Mops (Mother’s of Preschoolers) group one year!!
