Exciting news in the life of a food blogger & an easy healthy snack!

You know that guy I’ve been raving about here, here and here? Yeah, that one! The one I met in the Navy 21 years ago, my best friend, husband and father to my 3 beautiful girls. Well he was impulsive…..again……but this time in MY favor!! He just happened to buy me the BEST EVER combination Anniversary, Mother’s Day and just because GIFT! When you see it….you’ll know why. In fact, I’m pretty sure this should cover me for my birthday and Christmas too. Though he bought it for me just because…….

I’ve been wanting one of these fancy SLR camerasย for probably forever! Hasn’t everyone? Especially mamas…once we have kids we have this insane desire to capture every moment for eternity. But I guess it’s really only been in the past 5 years that these cameras have been more in the mainstream, and the prices even began to dip into the “it’s possible someday realm.” Though I’m glad we’ve waited because they came down quite a bit more. Yay!!!

So it will serve a dual purpose for me….one as a mom and one as a food blogger. We bought a pretty nice point and shoot camera last year when I had been borrowing my daughters camera for at least a year. She and I were both tired of that arrangement. Also I was really starting to get into my food blogging, and a camera with great low light capabilities was a must. The guy in the fancy camera store told me I’d outgrow it and get frustrated (which I did), but it took me over a year of learning to reach that state…and we needed a smaller camera for daily use anyway. Notย a wasted purchase at all.

In food blogging though you get to the point where you want to progress in your photography skills. And I had reached that point…and I really wanted manual settings. Especially after the great photography sessions with Tartelette at Food Blog Forum Orlando. And as a mom…I don’t have to tell you how we all crave those professional photographs of our kids. Well I might even be able to achieve some of those too. ๐Ÿ™‚

Now let’s get back to food! I’ve wanted to blog about my latest healthy snack for awhile now. In fact…there’s something special about this snack. It satisfies my craving for something refreshing, light AND also my chocolate craving!! Chocolate and healthy in the same recipe……oh yes, and EASY….check it out…..

Easy fruit snack with mini chocolate chips

Serves: 1-2
 
A healthy snack full of refreshing fruit and just a smidge of chocolate!
Ingredients
  • Frozen pineapple chunks, diced small
  • Other fruit of choice, diced small (I used a pluot and mango)
  • raisins
  • mini chocolate chips
  • unsweetened coconut shreds, optional
  • walnuts, diced small, optional
Instructions
  1. Pull desired pineapple quantity out of freezer and place in bowl.
  2. Dice other fruit you've selected. You can use more than one...use your faves!
  3. Dice pineapple now that it has thawed a bit (but should still be frozen).
  4. Sprinkle in a tbsp or so of raisins.
  5. Sprinkle in as much chocolate as desired...this varies depending on your craving.
  6. Sprinkle in coconut or nuts (optional).
  7. Mix well and eat COLD...the colder the better. SO GOOD and SO EASY!!
