My friend Robin is the girlfriend that everyone would love to have. She’s friendly, outgoing, fun and a great listener. To top it all she’s an amazing cook, hostess and entertainer! I was one of the few select homeschool moms she had over the other night for an intimate dinner. She really pulled out all the stops! Just check out what waited us when we arrived….
She told us to come hungry, but didn’t let us bring anything or give us any hints. I was equally impressed with this beautiful table setting…
After we’d chatted awhile, she gradually made her way into the kitchen. Everything was spotless, and there was really no hint of the food we were being served. I was curious, and I was getting hungry! Then she proceeded to fire up her electric grill and “grill” romaine lettuce. As a foodie, how had I not heard of this? She then made the task seem the easiest in the world as she sipped wine and grilled entire heads of romaine one side at a time…2 minutes per side, grilling only with olive oil. I was definitely intrigued.
It was fun to watch, and then she walked over and popped this into the oven…breaded chicken cutlets and homemade polenta croutons.
While these yummy nuggets were warming up, she assembled our salad. She chopped the romaine, added sun dried tomatoes, toasted pine nuts, parmesan cheese and ceasar salad dressing. Don’t you just want to dive right in….
We poured our wine (I had red), and glasses of water, and sat down for the first course….tomato basil soup (the only thing not homemade because she swears by how good this pre-made soup is from Costco…and she was right!! Even our kids would love this!). Our soup was topped with fresh basil, and did not disappoint. I didn’t get a picture of it since by now we were sitting down and enjoying our meal.
After our soup, our salad was topped with the chicken which she breaded with homemade bread crumbs made of sprouted grain bread. Everything tasted so wonderful, and the ambience (a quiet house…her hubby had taken the kids out for the evening) was so relaxing and peaceful. She wanted to create a peaceful retreat for us, and she definitely succeeded.
And then she put it completely over the top….
one of my VERY favorite desserts….homemade Lemon Creme Brulee topped with raspberries!!! Mmmm…..
Thank you again Robin for such an AMAZING evening!! A foodie’s dream, and a nice bonus was I got to meet a couple new friends. And we all agreed…we can’t wait to dine at Chez Robin again!
