Chocolate Pretzel Blondies ~ Secret Recipe Club


This month I was assigned Our Eating Habits for the Secret Recipe Club. Jamie’s blog was fun to read through. Turns out they are another homeschool family of 5. Homeschooling is very popular, but it’s rare I bump into them in the food blogging realm. As usual there were so many tasty recipe to choose from, and it’s always so hard to decide. I’m always on the lookout for new appetizer and dinner ideas, but sometimes the sweets win out. My girls were also rooting for dessert so there you go. I finally chose these chocolate pretzel blondies because I’m a sucker for pretzels and chocolate. You know I love the salty/sweet combination. They were easy to throw together, and most ingredients you would have around the house. I couldn’t resist increasing the pretzels to a cup. I used sticks, and had my middle daughter break them in pieces. Since I didn’t have chocolate covered pretzels, I also added 3/4 cup of chopped semi-sweet chips. It turned out incredible, but next time I’d wait until the mixture was completely cool after adding the melted butter, or just add them in on the top. The frosting is optional. As much as I love buttercream icing and chocolate, adding it did make them extra rich.

Chocolate Pretzel Blondies

Ingredients
  • 5 Tbsp butter, melted
  • 1 cup brown sugar (I used white)
  • 1 Tbsp vanilla
  • 1 cup all purpose flour
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ⅛ tsp baking soda
  • 1 large egg, room temperature
  • ½ cup chopped chocolate covered pretzels (I used 1 cup pretzels and ¾ cup chopped chocolate chips)
  • BUTTERCREAM ICING:
  • 1½ cups powedered sugar
  • 4 Tbsp butter, melted
  • ⅓ cup unsweetened cocoa powder
  • 3 Tbsp whole milk
  • ½ tsp vanilla
Instructions
  1. Preheat oven to 350 degrees. Butter an 8 x 8 glass pyrex pan or brownie pan.
  2. Melt butter on stove in small saucepan, and then stir in sugar and vanilla. Remove from heat and stir in egg.
  3. In large bowl, add flour, baking powder, salt, and baking soda. Stir.
  4. Mix butter mixture into dry mixture and stir till just combined.
  5. Add in pretzels, and when cool add in chocolate chips or save for top.
  6. Spread batter into pan and bake for 20-25 minutes. Place on cooling rack to cool.
  7. If desired, make icing.
  8. Melt butter in small saucepan. Stir in powdered sugar, cocoa powder and vanilla. With wooden spoon mix well, and add milk in 1 Tbsp increments until you reach your desired consistency.
  9. When blondies are cool, frost and cut in 16 squares.
