If you’re looking for a quick and easy meal for your family, this taco bean tostada hits the spot. It’s super easy, so before I share the recipe I thought I’d fill you in on a bit around here. As most of you know I’ve traveled the past 2 weekends. It’s been FUN, but I sure am relishing my first Saturday morning in a long time that I can lounge around in my pj’s without a strict agenda. Isn’t it fun to have a free day once in a while? How long has it been for you? Is it time to “schedule” a free day into your calendar? 😉

Sandra Lee Summer Carnival ~ New York City!

20120429-054345.jpg
* Written this past Thursday when I was on my way….I just got home last night (Sunday). Had a BLAST!! More to come!

I’ve been quite the traveler lately! As a homeschool mom of 3, I don’t get out much. Really I don’t!! But lately it seems like every time I turn around, a new adventure awaits! It’s so much fun. This month I was assigned the blog Making Memories with Your Kids. Roast beef potato hash ~ attempt at a childhood favorite

20120415-073441.jpg
Ever have a favorite food you remember from childhood? I always loved the taste of corn beef hash. I never even really knew what it was, just that it was good! I pretty much never think of it though, until I see a can of it in the store. But I just don’t do meat in a can! Hey….no judgement here, but the thought if it gives me the heebie-jeebies! Seriously!!
