A healthy twist to broccoli salad

I absolutely adore broccoli salad…the kind with a mayo dressing (and unless I make homemade….mayo is not healthy). I love it with raisins and sunflower seeds.

So it occured to me yesterday that I could make broccoli salad with the bunch I had in the fridge. I remembered making a honey yogurt dressing with red wine vinegar & thought it would be perfect for the broccoli salad instead of mayo.

It turned out delicious, and I imagine it will only be more so once it gets really cold in the fridge.

Here’s what I did:

Mix together in a bowl:

1 bunch broccoli – cut small
2 organic apples – diced small
1/4 cup vidalia onion – diced small
1/3 cup organic raisins
1/4 cup sunflower seeds

dressing: whisk together and then pour over above. Stir to coat & refrigerate.

1 cup whole milk plain yogurt (Cascade Fresh)
2 T red wine vinegar
3 T honey

This was really, really good. You can also add cucumber or sliced grapes. You can use cashews or nuts instead of sunflower seeds. Some people add shredded cheese of choice and/or bacon.

SO YUMMY!!! I am very, very excited…can you tell?

LATER OBSERVATIONS: After the first day the salad got fairly soggy. Next time I will keep the dressing separate & add just before eating.
