Refrigerator Pickles ~ quick, easy & leaving for Chicago (I hope!)

I can’t believe I leave for Chicago bright and early tomorrow morning! I’m all packed and ready to go. I had a lot of fun shopping borrowing from my friend’s closets the past few days. I have to say I sure did love only packing for ONE person. Those that know me as an overpacker will be impressed that I’m only taking a small carry-on rolling suitcase and a large purse. It’s so cool!

I’m super excited to attend the Kenmore Blogger Summit and meet the other 43 bloggers attending. At this point, the only thing making me nervous is the travel advisory, and the 5-9 inches of snow they are expecting up there. Wow!! It’s been a LONG time since I’ve seen that kind of snow. I’m excited, but just want to get there safely and praying my flight doesn’t get cancelled.

I’ll be updating on Facebook and Twitter if you’re interested in all the Kenmore action! They’ve really gone all out for us, and I can’t wait! Kenmore will also be updating! I’m excited about sharing with you guys all the neat things from the weekend when I get back, so make sure you check back early next week!

Now about these refrigerator pickles….super easy! I love them!! I diced mine up small so they’d absorb the pickling taste a lot faster. I love pickles, but hate that some many jars I pick up at the grocery store are labled with yellow #5. Really? That’s so unnecessary! Whip up a jar, stick it in your fridge and have pickles by the end of the day. No canning required.

P.S. Do not taste the sugar vinegar no matter how tempting. Am I the only crazy one? I took a tiny taste and the vinegar literally choked me. I felt like my airway was closing up and couldn’t get my breath for several seconds or minutes. It’s funny now, but was quite scary at the time!

Refrigerator Pickles ~ quick & easy

Ingredients
  • 3 cucumbers, seeded & diced
  • ½ cup white vinegar
  • 1 cup sugar
  • 1½ vidalia onion, diced (optional)
Instructions
  1. In small saucepan dissolve sugar into vinegar on low to medium heat. Do not bring to a boil.
  2. Dice or slice cucumbers and add to sugar water. Pour into a jar and refrigerate. When in a hurry, I place in freezer for 15 minutes, stir, then 15 more minutes, stir and 15 more minutes.
