What’s new with you guys? I’ve been spending time in the kitchen, but my time cooking, blogging and hanging out on social media has been a bit limited these past couple weeks. ‘Organization Homefront’ has been full steam ahead, and I’m SO happy to share that I’m almost done with what I’ve set out to do. Yay!! Of course in any house, you’re never quite done with the big projects….but I finally feel I’ve gotten things to a manageable level so that I can tackle big projects once or twice a week in more “bite size” pieces. Which means I have more time for the FUN stuff: cooking, blogging, new kitchen creations, my girls and hanging out with them in their new beautiful rooms! 😉 We can get back to reading together and playing board games. Ah….I’m so happy!

I feel like I’ve been talking organization, purging and spring (deep) cleaning so much lately….now for a few fun tidbits of life around here. This past weekend we celebrated my oldest daughter’s 13th birthday. She wanted to have her 2 of her closest friends over for sleepover (a first), and the whole family had an amazing time. We are blessed that she has great friends….girls we feel good about her spending time with. I’m sure you all know how important that is especially in the teen years. Her requests were to spend the afternoon at the mall shopping with her friends, then out to dinner and then home for a movie and cake….and of course, the sleepover.

After we finished at the mall, we came home and picked up dad and her 2 younger sisters and headed to a local favorite restaurant Duffy’s. They have really great food in a sports bar atmosphere. My girls love the game room which has a claw candy machine. Every bit of change spent equals a small handful of candy. The girls had a blast building up quite the candy stash while we were there. I might be a ‘real food’ food blogger, but we don’t totally deprive our kids of sugar and junk….I just don’t keep it in the house on a regular basis, and I do try to limit it as much as possible.

We’ve also been schooling…we’re a homeschool family, so the kids are home and all in the mix while I do attempt these big projects. We had a/c issues when we first got home from vacation…it was leaking into the hallway….so that’s fixed now (whew!), and we’re hoping we can get another year out of our 11 year old unit. I’m also thrilled to announce I’ve been conquering laundry like there is no tomorrow. We also had a dryer issue for the past few months, and that’s finally been resolved.

It made a very loud, high pitched squeaking noise while it was drying (oh yeah, it was driving me crazy so I limited laundry to the must haves)….I can’t tell you how relieved it was fixable and has finally been taken care of! Yay!! In tackling the laundry, I’ve been going through and weeding out clothes that don’t fit the girls and bagging stuff up for friends and goodwill. I won’t even mention our internet issues….our DSL has been spotty lately, and we’re trying to figure out our options. But let’s talk food now…….

I made this salad for lunch last week….doesn’t it look tasty? It was quick to throw together if you have leftover steak in the fridge like I did, or you can make leftovers on purpose. Or simply buy a steak to make at the beginning of the week and have salads everyday for lunch, or you can also use them in these lettuce wraps. I love BIG salads like this! What’s your favorite “go to” lunchtime salad?

Steak salad with salsa dressing

Ingredients
  • 1 head romaine lettuce, washed and chopped
  • 4 or 5 leftover steak kebabs (grilled steak)
  • 1 - 2 Tbsp diced sweet onion or red onion
  • ⅛ cup shredded cheese (I used cheddar jack & monterey jack combined)
  • 1 medium tomato, diced
  • TO MAKE SALSA DRESSING:
  • Sour cream
  • Salsa
Instructions
  1. Wash, dry and chop lettuce and spread on a plate.
  2. Slice leftover steak and arrange on lettuce.
  3. Dice onions and sprinkle on salad.
  4. Shred cheese and sprinkle onto salad.
  5. Wash, pat dry and dice tomato and sprinkle on salad.
  6. TO MAKE DRESSING: Mix equal parts salsa of choice or homemade with sour cream.

  4. Wow, that sounds like one crazy time!

    My favorite lunch or dinner salad is a walnut-cranberry spring mix covered in grilled chicken, croutons, and a sweet vinaigrette. I could have that any time and be completely satisfied. 😀
