Baked ziti & not quite fall yet

I’m so excited that fall is right around the corner. I’ve told you all before that fall takes its own sweet time getting here in South Florida. But thankfully since I’ve been living here for almost 20 years, I can feel the subtle changes in air temperature. When I headed out for my run Sunday morning before church, I was shocked and thrilled that a very slight cool front had descended on us. I quickly checked my weather app….yep, 75 degrees instead of the normal 79. Hey…I know it’s only 4 degrees, but I’ll take it! There was also a slight breeze.

Aside from all the other reasons I love fall, I have to admit that I’m especially excited at the chance to RUN in colder temps. Since starting back to running the end of May, humidity and 80 something degree temps are the norm for me. I do schedule my runs for early morning or late evening, but it’s still pretty sticky out. I have to say it’s somewhat of a dream of mine…the thought of actually starting a run cold and warming up along the way. I’m told cooler temps will do a little bit to help my pace too, so I’m anxious to see if that’s true. As a slow runner, I’ll take all the help I can get.

Lately my tastebuds have been craving Italian flavors, so sauces, pastas and homemade pizza have been making a regular appearance in my kitchen. This ziti came out of one of those cravings. Homemade sauce, ground beef, ziti were all just begging to be topped with a huge helping of mozzarella cheese. I knew my girls would be thrilled!! Anytime I want to smother anything with gooey cheese, they’re happy. Thankfully I wrote it down as I made it because they definitely want me to make it again soon!

And if you’ve started with My Fitness Pal app, you’ll be happy to see I added in the calorie count for you. I can’t guarantee that I’ll do that from now on, but I’ll try to put it in when I can. Thoughts on that?

Ingredients
  • 16 oz. box ziti
  • 1 lb ground beef
  • 1½ jars Flora tomato sauce (36 oz)
  • 2 tsp italian seasoning
  • 1 Tbsp oregano
  • 2 tsp basil
  • 1½ tsp sage
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp crushed red pepper
  • 1 bay leaf
  • ¼ cup sugar
  • 2 Tbsp pecorino romano cheese, freshly grated
  • 2 Tbsp parmesan cheese, freshly grated
  • 1 pound mozzarella (shredded), for melting on dish while baking
Instructions
  1. In a large pot, brown ground beef. While browning sprinkle beef liberally with sea salt, pepper, oregano and basil.
  2. After meat is browned, add Flora tomato sauce, all seasonings, sugar and parmesan and romano cheese. Don't pour off grease. Turn to low and simmer 1-2 hours.
  3. minutes before ready to eat, bring pot of water to boil for pasta. Add Tbsp salt and a dash of olive oil. Cook pasta al dente about 9 minutes.
  4. While cooking pasta, preheat oven to 425.
  5. In a large 10 x 15 casserole dish, add in cooked pasta and all of the meat sauce. Grate a bit of extra parmesan and romano cheese in for good measure. Top with shredded mozzarella cheese.
  6. Cover with foil (tented), and bake for 30 minutes or until the cheese is melted and bubbly.
  7. For a 5 oz serving: 238 calories, 8 grams fat, 22 grams carbs, 6 grams sugar, and 19 grams protein

My Fitness Pal & weight loss update

Again I leave you hanging…..sheesh. I can’t be trusted, can I? I will never give up coming here and sharing with you guys. I love the outlet Creative Kitchen has become for me, the people I’ve met through my blog and above all sharing things with you from my kitchen. In fact, I have a tasty pasta dish for you later this week! Promise me you’ll continue to stop by, okay?

Since sharing with you my love of running, I’ve been cooking and baking up a storm in my kitchen. Which is surprising considering that I’m still losing weight. Do I dare say I may have found that “sweet spot?” Over the last 3 years since I’ve been food blogging, my weight has fluctuated up and down the same 5 to 10 lbs. This summer I’m finally down at the bottom of a whole new decade of numbers.

Chocolate Pretzel Blondies ~ Secret Recipe Club


This month I was assigned Our Eating Habits for the Secret Recipe Club. Jamie’s blog was fun to read through. Turns out they are another homeschool family of 5. Homeschooling is very popular, but it’s rare I bump into them in the food blogging realm. As usual there were so many tasty recipe to choose from, and it’s always so hard to decide. I’m always on the lookout for new appetizer and dinner ideas, but sometimes the sweets win out. My girls were also rooting for dessert so there you go. Other runner ups included Pizza Pretzels, Tomato Bagels, and Sour Cream Cranberry Bars. Make sure you stop by and check her site out yourself. You won’t be disappointed!

Igniting an old flame…..RUNNING!!

Hi guys! Thanks for putting up with me this summer. I’ve really missed my time blogging and connecting with you, and I plan on posting a couple times a week from now on. So many neat things I want to do here at Creative Kitchen. I know I’ve shared what an incredible summer I’ve had, but I feel like I haven’t really shared some of the big stuff going on in my life. Good stuff…fun stuff! Sorta like a big ole’ secret, and it kinda has been (unless you follow me on instagram and twitter…then it’s no surprise to you). I mentioned briefly that I started back to running, but that doesn’t really convey HOW GREAT I FEEL!!

This past May, my husband wanted needed to lose some weight. It’d crept up on him over the course of this past year, and he was ready to do something about it. I was thrilled for him since I knew he’d feel much better. I also knew I would support him in anyway I could. We’re both Lifetime Weight Watcher members, so he knew he needed to head to a meeting….and that’s just what he did. He bought a monthly pass so he was committed to weekly weigh-ins. I can lose weight at home on my own, but he’s always needed the “face off” with the scale to spur him on.

Amazing sandwich buns in 60 minutes ~ Secret Recipe Club

Secret Recipe Club time again. This month I was assigned Wives with Knives. What a clever name for a food blog. Cathy had so many great recipes to choose from, and I’m so glad I was introduced to her blog. She lives in Oregon, grew up on a farm, and shares many recipes that have been handed down through her family. Cathy also is a vendor at a local farmer’s market selling roasted and glazed nuts, granola and trail mixes. How cool is that?

I bookmarked a few recipes for future use….cranberry buckle, brioche loaves, and lemony slice and bakes were all begging to be made. I decided I’d be a bit more practical and make these homemade sandwich buns! I love homemade bread and rolls, and couldn’t wait to try these. Especially since they can be made in 60 minutes!
