Roasted sweet potato & black bean tostada

This recipe of mine is an oldie, but a goodie! I first shared the sweet potato and black bean tostada here back in the beginnings for the blog in 2009. That old picture just doesn’t do the meal justice. So it’s definitely time for a redo, an update to share with those of you who haven’t been around that long. 😉

If you’ve never tried sweet potatoes roasted….then that is your first order of business! If you have…then you know what I’m talking about. Roasted sweet potatoes for me are an addiction. I feel no shame in saying that I can eat a whole roasted sheet of them myself. It’s crazy how good they are. If you have a sweet tooth like me, then make sure you give them a try.

These are MUCH better for you than sugar laden desserts. If you don’t want to heat up the house, then you can also make them in your toaster oven. Another idea is to make them early in the morning before the day gets too hot. But definitely make some for this recipe….you’ll thank me later!

Oh and one more thing….for those of you who think you don’t like sweet potatoes, these are not the sweet potatoes from your childhood. At least not the ones from my childhood. Give them another chance….really!

~ Go ahead and whip up my homemade salsa to go with these. It’s so easy!

Roasted sweet potato & black bean tostada

Sweet potatoes and black beans make the most amazing combination!
Ingredients
  • Roasted sweet potatoes
  • 1 can black beans
  • ¼ cup sweet onion, minced
  • 1 Tbsp olive oil
  • ½ tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • corn tortillas
  • TOPPINGS:
  • 1 avocado, diced
  • onion, diced
  • tomato, diced
  • cheese, shredded
  • lettuce, shredded
  • sour cream
  • salsa
  • hot sauce
Instructions
  1. Roast sweet potatoes with olive oil, sea salt and pepper at 425 for 30-40 minutes.
  2. In large skillet, add onion and cook till softened. Add in can of black beans (drained and rinsed). Stir in cumin, garlic power and onion powder. Cook for 10-15 minutes until you achieve desired consistency.
  3. While beans are cooking, prep all toppings.
  4. I use frozen organic corn tortillas from Whole Foods. I pop them in my toaster oven till hard and crispy. You can also crisp them up in the oven or fry them up in a little bit of oil in a skillet.
  5. Spread tostada with black beans and top with roasted sweet potatoes. Add on desired toppings.

Fun Friday and Fish ‘n Chips ~ sharing more of my Disney obsession!

I’m in the mood for a FUN post! It’s Friday & I’m giddy!! Aren’t you happy the weekend’s here? What about the fact that summer has pretty much officially arrived? I’ve been mentally planning our summer fun for the past month, and finally put it down on paper this week. I created a calendar for June and July, and have been marking down all our activities, plans, and trips.

With all our school year activities finishing up, my girls had started to get ancy, “we have nothing to do!” So glad I remembered that they need to see our plans in a concrete fashion to lay off mama. Mama’s need breaks too! It’s a lot of work planning and coordinating with other moms, friends and juggling all the regular stuff that needs to be done. Our minds are working overtime….seriously 24/7 and it’s all behind the scenes. Can we have a little bit of appreciation? Who’s with me? This mama gig is hard work sometimes! 😉

I’ve been wanting to share with you guys for a long time about some of my favorites at Disney! In fact, we just zipped up there this past weekend. Living in Florida…I’ve mentioned before that our family is bigtime Disney fanatics. Our girls are now 13, 9 and 4, and this is the third time we’ve been blessed to be season passholders! Over the years we’ve created AMAZING memories with them! They love Disney…and my hubby and I love Disney because there’s something there for all of us to do. We have FUN together the whole time we’re there.

The rides never get old because we make new memories every time we ride them. I’m sure it helps we have a 4 year old, and we’re all excited to show her Disney all over again. This past February when we went…it was brand new to her. She didn’t remember the trips we took when she was 1 and 2 years old. And then of course we talked about trips in the past. Certain areas spark memories from when our older two were younger. Ahh…parenting can be bittersweet, but at least when my honey and I are old and gray we can visit Disney and stroll down memory lane again and again and again!

One of our favorite things to do at Disney of course is EAT! Right? Everyone has their special meals, snacks and treats they look forward to when traveling….and Disney trips are no different! Disney fanatics the world over obsess about making sure they get their treats in. I splash these Disney treats all over Instagram, and have probably mentioned them before.

Today I’m sharing my love of Fish ‘n Chips and the United Kingdom Pavilion. I have Irish roots and hubby has Scottish roots so I’m sure that plays a part. Maybe one day we’ll get to take a trip over there, but for now we’re content to get our British, Irish and Scottish fill stateside here in Epcot. If you haven’t been to Epcot in awhile….you must go! Recently we chatted with a couple that hadn’t been in at least 20 years. That always blows my mind!

Disney even has a Florida resident pass for just the Epcot park after 4pm. It’s at a reduced rate, and a great way to get in some Epcot time if you’re not into the other theme parks. But please don’t mistake Disney for your typical theme park. Disney stands above the rest! They honor and treat their guests special. It’s one place we know that service still means something. We get value for our dollar. We also never stand in lines….we know how to work the fast pass system, and even on crowded days we do all we set out to do.

Who else loves these Fish ‘n Chips? They’re my main must have meal when I’m visiting Epcot. They’re tender, flaky, crunchy and just plain amazing! A value at only $7.99! Make sure you stop by the Yorkshire County Fish Shop next time you’re there. What’s your must have meal at Epcot?

Mango apricot jam & adventures in jam making

What did you guys think of that new automatic jam maker I reviewed yesterday? I admit at first I thought, hmm….it’s just a fancy machine to stir for me….really? But after I tried it….wow, so much fun! I’m making red pepper jelly next. My grandma even chimed in with her two cents in the comment section. Yeah…..my grandma’s cool like that. 😉 She doesn’t just know what a blog is, she even comments on it. I’m thrilled she reads……my grandma is a gifted writer, and it means a lot to me that she reads my stuff!

Back to canning and Ball’s new jam maker. You know I’ve shared with you how she’s canned and preserved food her entire life….well, she was EXCITED to see this invention. Here’s her quote from my comment section, “The news of this new gadget comes at a great time, as a back problem makes it uncomfortable to stand for long periods of time for the making of much jam on the same day. Thanks, Denise, for seeing that your grandmama got the word!”

Wow…now I knew this would be a great product for those doing a lot of jam canning, but I never even thought of how it’d help out health related conditions. And no….this isn’t a commercial or sponsored post, just that I’m a fan of this neat machine. Many more experiments to come!

I had the mangos and apricots to use up, and so I made this mango apricot jam. It was super easy to make! It was a little on the sweet side for me, but my girls gobbled it up. The amount of sugar you use does affect the thickness (setting) of the jam. So this is the most sugar I’ve used. I’d like to scale it back to just a cup and see what happens. When I make my jam on the stovetop, I use as little sugar as possible. You can also use honey in jam making, but I’ve yet to find out if I can use it in the new jam maker. That would be a plus. I’ll keep you posted on all my experiments!

Mango Apricot Jam

Easy recipe to use up your ripe fruit!
Ingredients
  • 2 ripe mangoes, peeled and diced
  • 6 apricots, peeled and diced
  • 3 Tbsp Ball RealFruit Classic Pectin
  • Juice of one lemon (or 2 Tbsp bottled lemon juice)
  • ½ tsp butter
  • 1¾ cups sugar, preferably organic cane sugar (unbleached)
Instructions
  1. Wash and peel mangos and apricots and cut them in small pieces.
  2. Sprinkle pectin along bottom of jam maker.
  3. Add fruit evenly over pectin.
  4. Squeeze lemon juice over fruit.
  5. Add ½ tsp butter to top (helps to prevent foaming).
  6. Press JAM button, then press enter. Cook time will be 21 minutes.
  7. After 4 minutes machine will beep prompting you to add sugar. Add sugar and place glass lid on top of jam maker.
  8. minutes later your jam will be ready. The jam maker stirs continously and keeps the fruit at the right temperature.
  9. Makes 4 HALF PINTS OF JAM!
  10. * If you don't have a jam maker, then just put these ingredients into a saucepan over medium heat till bubbly. Turn burner to low and cook till thick....stirring as needed to keep jam from sticking to the bottom. This usually takes me around 30 minutes give or take. You can cut back the sugar (use ¾ or 1 cup) if you want. Or try it with honey (1/2 - ¾ cup)

Ball FreshTech Automatic Jam and Jelly Maker {Review} & Canning Kit {Giveaway}!

I grew up spending a lot of time with my grandparents who are avid gardeners. My grandmother would can, freeze and preserve all the produce from their massive gardens each summer, and my cousins and I learned to work a farm….from feeding the ducks, chickens, pigs to helping milk the goat. I remember many days in the kitchen by my grandmother’s side assisting her, and I fell in love with Ball canning jars. Actually any type of mason jar and glass bottles….especially cobalt blue. My summers spent in West Virginia with my grandparents and cousins are some of my most treasured and special memories!

So when I was contacted to see if I wanted to review Ball’s new FreshTech Jam Maker, I jumped at the opportunity! I love making homemade jams and fruit sauces, but I have to admit it only usually happens a few times a year because of the amount of time it seems to take. Chopping fruit is not an issue, but the time standing at the stove, stirring and monitoring to get the jam the right consistency…..all the while guessing at the proper temperature to keep it from sticking to the bottom of the pot can be a pain.

It’s a guessing game I don’t mind playing because I love the outcome of fresh fruit jam. But now this new automatic jam maker takes all that guesswork out of the equation….3 simple steps later and you’re done. And no babysitting the jam!! Did I mention it’s quick….under 30 minutes quick.

When we returned from Disney over the weekend, I was greeted with my new jam maker. I couldn’t wait to get it out of the box to check it out, and to peek through the small recipe booklet it comes with and start making jam! I was happy to see no assembly was required. I had also been wondering about size, but am thrilled to share that it’s about the same size as the new slow cookers out there so storage won’t be an issue.

All you need is fruit, sugar, pectin, a small bit of butter, and with some recipes lemon juice is needed. It turns out that I had 2 mangos and a drawer full of apricots that were ripe and just begging to be made into jam (recipe coming in next post) I peeled and cut them up into small pieces. After plugging in the jam maker, I sprinkled Ball RealFruit Classic Pectin over the bottom of the pot with the stirrer attached.

Then I added the fruit, the juice of one lemon and 1/2 teaspoon of butter. I pressed the JAM button, and pressed enter. 4 minutes later the jam maker beeped. I added the sugar slowly and then covered the pot with the glass lid. 17 minutes later the jam was ready….it was that quick and easy!

I ladled the jam into half pint jars and marveled how the ripe mango and apricots that were surely destined for the trash were now transformed into 4 lovely half pints of mango apricot jam! Wow…..incredible. My mind started conjuring up different jam possibilities. This is where you can get really creative! 😉

I imagine people with a large garden harvest or an abundance of fruit trees would get a lot of use out of this jam maker. I’m also excited about the speed of making jam….a great gift to give others at holiday time or anytime. The jam will last for 3 weeks in your fridge, or did you know you can freeze it right in the canning jars? I didn’t!

My first REAL knives ~ hubby scored with this anniversary gift!!

I know I’m a BLESSED woman….truly I do. Even without these amazing new Wusthof knives, I know how good I have it. Hubby and I just celebrated our 15 year wedding anniversary, and these knives are proof that he listens and knows me. I was giddy when he presented me with two long narrow boxes, and wasn’t the least bit disappointed when they didn’t contain jewelry. 😉

You see I’d been pinning after REAL knives for many years now. I knew my knives weren’t all that sharp, and though I’m told those are the most dangerous types of knives….I compensated and never got cut. I convinced myself I’d lose a digit if I had the really sharp ones, and carried on in the kitchen never missing a beat. I’d mentioned it off and on to hubby, but see….he wasn’t convinced in the least that anyone would need a $100 knife.

So you can imagine my SHOCK and delight when not only did he produce these knives to me, but I found out he spent the afternoon researching them, tracking down where he could buy them and then actually hunted down a Williams Sonoma. Can you believe he’d never heard of the store? Or that he didn’t know they had one at our mall? Tiff, tiff…..seriously babe, you’ve seen me walk in them and I’m convinced you’ve gone in with me at least a few times. Funny the things guys remember, huh?

Oh these knives changed my world!! I’ve been chopping, dicing and mincing like nobody’s business….and these knives have blown me away. Some of my happiest afternoons are when I have plenty to cut and accomplish this task with light classical music playing in the background. Truly it’s magical….with 3 girls home all the time with me, I count it another blessing.

And the VERDICT? I’ve haven’t lost a finger yet, and hubby is a changed man. You better believe he reaches for these knives too. Because he purchased them and knows their value, he hasn’t mistreated them by leaving them in water or throwing them in the dishwasher. Apparently my mother-in-law got quite a chuckle at how thrilled I was to get these knives for our anniversary. I’m pretty sure she’s a jewelry gal, and she must have seen this akin to my receiving a vacuum. 🙂
