It’s been a great week…we went camping with a group of friends the weekend before last, and starting that Monday, April 8, my honey and I started a juice fast/juice feast. I can’t believe how amazing this green juice is, and how satisfying it is. My husband wanted to do a 10 day juice fast, and I started with him last Monday just to support him. I fully intended on only doing one day, but also I figured if it wasn’t too hard…maybe I attempt 3 days on juice only. And in the very, very back of my mind I kinda hoped I could do 5 full days. Well as of today…hubby is on day 9, and I did complete 5 full days of juicing only. Yay!! 😉

I can’t wait to share more with you all about our juicing adventures in a future post, but today I’m here to talk to you about roasting vegetables. Don’t you just love roasted veggies? You’ve tried them, right? I figured this was nothing new….but was curious what kind of veggies you like to roast. I’m always looking for new ideas! I usually play it pretty safe around here due to picky eaters, but this time I branched out.

Instead of just doing potatoes, sweet potatoes and carrots, I threw in other veggies I knew I liked…..onions, portabella mushrooms and zucchini. I also threw in a new one I’d never tried before…..parsnips. Have you had parsnips before? If not, you must roast them in your next batch. Oh my….they are SO good. I love sweet potatoes, but they seem to upset my stomach. Let’s just say the parsnips and the carrots made up for that.

Set your oven to 450 degrees. Spread olive oil over a baking sheet…..or two. Chop your vegetables in similar sizes so they cook evenly. I used potatoes, sweet potatoes, onions, portabellas, carrots and parsnips, but you can also throw in broccoli, cauliflower, and cherry tomatoes. Spread veggies over the pan, sprinkle with sea salt and pepper and toss around to coat them a bit with the oil. Bake or roast veggies anywhere from 30-45 minutes depending on the size you cut them into. Stir halfway through, check and assess hardness. When the root veggies are soft when pierced with a fork, they’re done.

Our Daniel Fast update ~ blessings and benefits

Time on the Daniel Fast just flew by! We broke fast at sundown on Good Friday. What’s harder to believe is it’s already been 11 days since then. Between Easter and camping with friends this past weekend, I’m just now getting around to updating you guys on how things went while fasting. I’m in awe of how much my husband, family and I have grown during our time on the fast (our teen joined us because she wanted to and the other two girls just ate healthier with all the produce in the house). God has shown us so much during the fast, and we’ve bonded even closer than before. When you tune out the distractions of the world, and focus on what’s most important….each other, then it stands to reason we’d get along much better.

We both lost weight these past 3 weeks (Hubby almost 15 pounds and I lost 8 pounds)….not hard to do when you cut out processed food, sugar, all refined flour, dairy, meat, eggs, fried foods, caffeine, etc and eat a largely plant based diet. Did you know that at least 60% of our daily intake of food should be RAW? And a huge benefit was that we also lost cravings for sugar. After the first few days, it became very easy. I’m sure the spiritual aspect played a large part of that. We were doing without for Him. And filling ourselves up with Him. Eating fell into it’s rightful place of sustaining and fueling ourselves instead of being a the focal point of our day. It was freeing!

That’s not to say I didn’t miss certain things. As I’ve been learning more about my body and food intolerances this past year, I’m learning what agrees with me and what doesn’t. I know everyone is different but I can absolutely say my body doesn’t like certain grains or beans, and that I have no issues with eggs or meat. Because of that, I didn’t eat many grains or beans while on the Daniel Fast. That certainly limited me which made me look all the more forward to when I could have eggs for breakfast again or meat with my dinner. Meat and eggs made it back into my diet now that the fast is officially over, but I’m not ready to give up another BIG benefit of the fast…..INCREASED ENERGY!! Eating mostly vegetables and fruit, and cutting out all that sugar, most grains and caffeine has given me so much energy and mental clarity that I literally feel 10 to 15 years younger. Wow!! Can’t buy that in a store….and you can imagine I’m not keen on giving that up. 😉

We also received answers in a key area I had been praying about during the fast….my husband’s health. Over the past 20 years we’ve been together, my hubby has had some big health concerns. For one…he’s quite addicted to diet soda (as in you’d be in disbelief how many he consumes a day) and two, he HATES vegetables. Let me clarify….he literally gags at the thought of eating them. He only eats lettuce, corn and potatoes. Nothing GREEN ever!! EVER!

So you can imagine it was a very BIG deal when we started drinking GREEN smoothies back in 2006. I was shocked I was actually getting spinach into his system. Of course we’re talking 1 large handful of organic baby spinach leaves blended with an abundance of fruit (3 frozen bananas, 2 cups frozen pineapples, mango, strawberries), but it was a start. If he happened to be watching me though…he’d pull out some of the spinach out if it looked to be too much. It was crazy….if you’ve ever tried a green smoothie you know you can’t taste spinach.

During the fast (on March 16th) we started watching some healthy living documentaries on Netflix instant stream. It was great to see him learning more about the horrors of the standard american diet, and also my two older girls were hanging out soaking it all in too. When he was taking my middle daughter to Praise team practice at church, my teen and I put on the documentary “Fat, Sick and Nearly Dead.” We’d all seen it last year, but wanted to watch it again. Hubby came home while it was on and got immediately drawn in. He was saying, “ooh, this is a good one.” And this time he was watching it during the fast, and he was incredulous at how much weight Joe Cross lost and how much health he gained on his juice fast. He started wondering about juicing.

Fast forward a few weeks, and juicing has become one of the healthy living habits in our home. I can’t wait to share in an upcoming post about hubby’s breakthrough with green vegetables, and all about our new juicing lifestyle. It’s a great story, and one I can’t wait to share! If you’ve followed along on Instagram then you’ve seen pictures of our new adventure in juicing. I’ll also be dispelling misconceptions I’d had about juicing in the past. Let’s just say one thing I wasn’t aware of is juicing is primarily made of vegetables not fruit (unlike the green smoothies I’d been making).

And how are my eating habits now that the Daniel Fast is over? I’m proud to say that I’m still SUGAR-FREE! Even over the weekend camping. One other time before I had daughter #3 I’d gone 9 months without sugar but I was still using natural sugar like honey and maple syrup. This time the only sugar I’m consuming is produced naturally in foods. Will I stay off sugar forever? Of course not. It’s not practical and life is too short to not enjoy sweets or chocolate in moderation. But what I will say based on my prior experiences is, that I’m gonna ride this train as long as it lasts. The longer I’m off sugar, even natural ones….the better. I’m at the top of my 5 pound weight range goal and I want to hit the bottom of it. That means losing 5 more pounds. But more importantly to me is the ENERGY and MENTAL CLARITY I gained while off sugar and caffeine. My diet today is mainly plant based (or plant strong) with some eggs and meat added back in. I’m still off dairy and grains. And thankfully my stomach hasn’t had any issues which is another answered prayer.

In future posts I’ll be sharing about hubby’s green veg adventure, some new juicing recipes we’ve concocted, and new green smoothie recipes. I can’t wait to show off our new shiny juicer! I also have many more real food recipes to share with you, and even though I’m off dairy and grain for now (and sugar)…I have regular recipes to share incorporating those food groups. I’ll also be sharing, exploring and posting recipes that meet my new lifestyle. This blog, like my life, will continue to evolve, but will always maintain it’s focus on real whole foods, healthy living and cooking from scratch. Pineapple Banana Muffins (Gluten-free, Dairy-free, Egg-free, Sugar-free) & a peek into my other world

I’m thrilled to be back here sharing you with you guys!! We’ve had another VERY busy couple of weeks. We’ve had a couple really incredible positive outcomes for 2 of our clients in our family law practice. I sure do love my husband, and think he’s an amazing attorney. He’s compassionate, kind, hard-working and a man of integrity. It’s been so fulfilling to be working with him side by side this past year and a half since we opened up our own practice.

And I’ve learned SO much about the in’s and out’s of family law….the nitty gritty of divorce and just how very, very sad it is. My heart breaks for the families torn apart when one spouse decides that there is no way to reconcile. No one is perfect…we all have faults, but forgiveness (if needed) and commitment to stick through the hard times should be paramount in our lives. I’m not saying it’s easy…marriage is HARD work, but when you get through hard times together, and always commit to working through them no matter what….well let’s just say the BLESSINGS are beyond measure.

We’ve also just gotten all of our tax preparations ready for our CPA. This was our first full year operating our small business, and there was a lot more to tax prep than in years past. As in it took hubby and I two full days. I sure hope that means each year from here on out will be a bit easier. It just feels SO good to get it all turned in, and moving on to my next big tasks. At the office, that means filing cases and motions electronically which starts next week instead of those trips to the courthouse. I’m sure it will actually make our lives easier, but for now it’s another daunting new thing to learn. 😉

Another BIG deal in our lives right now…..our first business advertisement, full page, in color is ready for publishing. It’s in the online directory now, but will be in print in June. It’s exciting to say the least!! It may seem strange to some that we are Christians who play a part in the dissolution of marriages, and it seemed a very strange ministry and business to us when God called us to it. I was very unsure how we were going to make a living at this since our desire is to SAVE the marriages that come our way.

Over the past year I’ve seen God move. I’ve seen my husband’s counsel bear fruit in couples that are now trying to make it work. We have a few praise reports already. I’ve also seen how God wanted us to help people who had divorce thrust on them by a spouse that just wants out. I now see how this is the perfect place to help people in their marriages since most times a “divorce” attorney is the last stop on the way to ending things. I’m excited to be in this role, and partnered with my husband in this ministry.

Moving onto the food…..these muffins are the closest I’ve come to a “real” muffin while on the Daniel Fast. When baking on the Daniel Fast I can’t use eggs or butter (think vegan) or sugar or baking powder or leavening. So I was thrilled with these results. They baked up fluffier and lighter than my past attempt, and are very filling and nutritious. Any sweetness you taste is from the very ripe bananas (the riper the better), the pineapple and the ground almonds, coconut and almond milk. Even if you don’t have dairy allergies or are vegan, I hope you give them a try. They make a perfect healthy snack and my girls all loved them.

I have many more exciting adventures to tell you about….and new healthy recipes to share! You know I’ve been cooking and creating up a storm during the Daniel Fast. Everything cooked from scratch and the confines of following certain guidelines sure get the creative juices flowing. Plus a Daniel Fast update! Keep checking back…..

Pineapple Banana Muffins (Gluten-free, Dairy-free, Sugar-free)

These Pineapple Banana Muffins are the perfect gluten-free and dairy-free treat. Another bonus is there are no added sugars.
Ingredients
  • 2 cups oat flour (You can grind oats in a blender, food processor or coffee grinder)
  • ½ cups ground almonds (I grind them in my coffee grinder)
  • ⅓ cup ground coconut (coffee grinder)
  • 2 ripe bananas mashed & sprinkled with cinnamon
  • 2 cups of diced fresh pineapple or 20 oz can of crushed pineapple in it's own juice (juice included)
  • 1 flax egg (egg substitute made with 1 Tbsp flax & 3 Tbsp water, sit for 10 min)
  • ½ cup unsweetened almond milk
  • 2 Tbsp coconut oil (or olive oil)
Instructions
  1. Preheat oven to 400 degrees.
  2. Grind up oat, coconut and almond flours. Grind flax seed and mix with water to sit and "gel."
  3. In a large bowl, add oat flour, almond meal flour, coconut flour. Mix thoroughly.
  4. Mash up 2 very ripe bananas and sprinkle lightly with cinnamon.
  5. Add bananas and pineapple to dry ingredients.
  6. Add flax "egg", almond milk and coconut oil.
  7. Stir until just combined. Do not over-stir or you will have a tough muffin.
  8. Lightly grease a 12 cup muffin tin. Using an ice cream scoop, scoop large muffin batter into each muffin tin.
  9. Bake muffins for 18 - 25 muffins keeping a close eye in the last 5 to 10 minutes to get the proper doneness. Don't overbake as they will be slightly dense and moist, but will not be runny or raw.
  10. Makes 12 muffins.

Apple Chips {Secret Recipe Club}

Secret Recipe Club time again guys! I really enjoyed reading through my assigned blog Feast on the Cheap. It’s a mother daughter team, and I love the variety of recipes they share. Their blog is one I don’t think I’d seen before, so I had a lot of fun getting to know Mary Anne and Mariel. I had quite a few recipes bookmarked before my Daniel fast began, and unfortunately didn’t get to cooking any of them until after my fast started. I was a bit worried that I’d be limited to a handful of recipes to choose from, but to my delight there were plenty.

Originally these asian chicken salad tartlet caught my eye. Along with these shrimp po’ boys and this meyer lemon pasta. And they are still on my list. But in the end….these apple chips won out. We’re on Day 9 of the Daniel fast, and this past week my oldest daughter and I have been eating my skillet juice sweetened granola for breakfast. We’ve been eating it with raisins, thinly sliced apples, blueberries and almond milk. I figured these apple chips would be perfect in our breakfast bowl. And they were!

They turned out perfect. I used my OXO mandolin that was in my swag bag last year at the Orlando Food Blog Forum in Disney. Do you have one? I love that thing!! The fruit came out paper thin. I only altered their recipe by omitting the sugar they sprinkled on before baking. I added just the cinnamon, but I’ll share their original recipe.

Apple Chips {Secret Recipe Club}

Ingredients
  • 1 apple
  • Sprinkling of cinnamon
Instructions
  1. Preheat oven to 200 degrees.
  2. Thinly slice apples to ⅛ inch thick (2 mm) with a mandolin or sharp knife.
  3. On a cookie sheet covered in parchment paper, lay out apple slices in a single layer.
  4. Sprinkle apples with cinnamon.
  5. Bake for about 1 to 2 hours depending on the thickness of apple slices.
  6. Remove and let completely cool before placing in a sealed container for up to 3 days.

Vegan Energy Bites ~ A perfect Daniel Fast treat!

I’m popping off this spinning merry-go-round of life to drop by with a recipe for you all. It’s been crazy busy here…I know you all can relate. My oldest daughter turned 14 (how is that possible??) at the beginning of March and we had an amazing, incredible birthday party for her at my dear sister-in-law’s house. Daughter’s requests were: chocolate fountain, cotton candy machine, messy twister and tiki torches….and lots of friends to help celebrate! I’m so blessed that not only were we able to deliver, but that my sister-in-law was such a huge help….it was SO much fun to share the workload with another mom and friend. 😉

Then we went right into prepping for our Daniel Fast which started last Friday. We’re doing a 21 day Daniel Fast with our church. Some of you may remember when we did this last year. It was so amazing last year, that hubby and I were excited to have the experience again this year. To refresh your memory, we’ve given up meat, seafood, dairy, eggs, sweets, all sugars even natural ones, yeast and leavening, white flour, caffeine and alcohol. We eat vegetables, fruit, whole grains, beans, legumes, nuts and seeds. Pretty basic, and definitely a huge stretch for my meat loving hubby. But he’s doing GREAT and says his body has never felt better. He said this last year!

This has been an even bigger adventure for me than last year due to my food intolerances. Ever since summer I’ve been so nervous about eating fruits and veggies, and had gotten used to my standard bagel with butter everyday. Last year I felt comfortable transitioning to these foods, and this year I was ambivalent and nervous that I’d wreck my stomach. During a fast you deprive yourself of certain foods and when you feel deprived you turn to God in prayer. You carve out much more time for Him, and tune out more of the distractions of the world. Hence as a result…I’ve noticed I’ve been on instagram less, facebook less and yes, even my blogging has suffered. I’ve missed you!

But it’s been a time of blessing! I don’t feel deprived or like I’m missing out. I will confess that last weekend was TOUGH!! In preparation for the fast I indulged a little last week (we stopped and bought some of the easter candy that we look forward to…robin’s eggs and jellybeans and chocolate covered marshmallow). We didn’t binge or overdue it, but I think I had quite a bit of sugar in my system when the fast started last Friday. We even went out to eat as a family last Thursday night which we rarely do so it was a nice treat! We ate out at a steakhouse. 😉

As a result, last weekend my body majorly rebelled. I had aches and pains unimaginable from the sugar detox and caffeine withdrawal. WOW!! I felt like I’d been hit by a truck. Headaches also. I couldn’t believe it lasted for 3 full days, and finally Monday I started feeling relief. Thankfully… because I had some deadlines to meet at hubby’s office Monday and Tuesday. Wednesday I picked back up my homeschool mom hat as we ventured down to the science museum on a field trip. Thursdays are always busy, and this afternoon we have our homeschool park day and teen leadership meeting so I’m thankful to have a bit of time this morning to share this recipe with you.

These energy bites are a recipe I made last year during our fast. They were a huge hit since we no real dessert options other than fruit right now. It’s a huge hit with hubby because of the peanut butter. It’s actually VERY easy too. Take a big bowl…dump in your oats, unsweetened coconut, peanut butter, crushed walnuts or any nuts/flax seed, salt, raisins and date honey which is easy to make. Since the date honey takes about an hour to make, you can probably also used unsweetened applesauce or mashed ripe banana. This part is your sweetener along with the raisins. Roll them into balls and place on wax paper and place in the fridge.

These are super tasty for a dessert or a snack. Secret recipe club is coming up Monday, but hopefully now that my first week of the fast is done and all the prep work that goes with it…I’m hoping to share a few Daniel Fast recipes I’ve been making if you’re interested. We have quite a large group of friends doing the fast as well, so it’s been neat sharing food ideas with each other.

A tasty treat while on the Daniel Fast. They're also vegan, dairy-free and gluten-free.
Ingredients
  • 1⅓ cups oats, organic preferred
  • 1 cup unsweetened coconut flakes (I buy in bulk at Whole Foods)
  • ½ cup natural peanut butter (no added sugar or molasses)
  • ½ cup crushed walnuts, any nut or ground flax seed
  • ½ cup date honey (link to recipe in post) or maybe mashed ripe banana would work
  • ½ cup raisins, organic preferred
  • ½ tsp sea salt
Instructions
  1. Mix all ingredients in a big bowl.
  2. Roll into small balls and place on wax paper.
  3. Refrigerate to harden and chill. Keep stored in fridge.
  4. Makes 28 balls.
