Back to school……..and new territory for us!

We’ve had some BIG news in our house this past month….BIG changes for this “only ever homeschooled” family. Our oldest daughter started high school. As in at THE local high school, and not the “co-op” classes she was taking last year with all her homeschool friends. And she’s definitely not at home anymore. It’s been a huge transition for our family, but one that I’ve had complete peace about since God brought this all about. These plans have been in the works since last January, and I’ve felt His leading every step of the way. Did I mention this is completely new territory for us?

Her first day

So when I say she’s definitely not at home anymore, I mean she’s gone 10 hours a day…..EVERYDAY!! The first couple weeks the house seemed so quiet, so different and very bizarre. I mean she’s 14 1/2….that’s A LOT of years of togetherness. Thankfully we started out slowly. The first week she was only there 7 1/2 hours….the typical school day. But she was excited to start running with the cross country team, and now with practice everyday…..we pick her up at 5pm instead of 2:40pm. That seemed to make a big difference to me….and to her. It makes for a VERY long day, but she really likes cross country and comes home refreshed and energized and ready to tackle her homework instead of dragging and tired. Exercise is always a good thing, right?

In other BIG news, we have our last Kindergartener coming up through the ranks. My “baby” is now 5 1/2, and she was SUPER EXCITED to start school. If you look closely you’ll see that I’ve used that banner for my other two…just changing the numbers of the year lol. My middle girl is now in 5th grade, and is excited to “not” be taking any local “co-op” classes this year (last year she took art and english/writing with homeschool friends). She enjoyed it, but she told me she was really looking forward to being home with me and the little one. 😉 Talk about making my heart feel good!!

So on their first day of school (which was 1 week after my oldest started so we could get used to the transition), I took them to a local hot spot known for amazing doughnuts. It was our first time, and the girls were in heaven. We ended up with a dozen to take home so we had plenty to share with my teen. I didn’t want her feeling left out. She’s mentioned how tired she is, and it’s so strange to see her headed for bed at 8:30 or 8:45 when she can’t keep her eyes open anymore while attempting working ahead in her classes. She’s definitely amazed at how busy and full her life is with academics.

She mentioned there is a lot less “socializing” at the high school compared to last year (at the co-op)….she only has 5 minutes between classes and all they do there is work, work, work. And then she brings home homework and works some more. Most of her evenings and weekends are filled with homework, projects, essays and studying. Though “homeschooling” high schoolers spend a good portion of their day doing school work, they don’t have any “homework” for the nights and weekends. Unless they are dual-enrolled, which is a great way to knock out some college credits for free.

Kindergarten and 5th grade are going well….we’ve gotten into a nice routine, and I love how their excitement for learning feeds into each other! I’m sure having them both at home has helped me ease into being a “school” mom. That role is a bit strange for me…I used to be a teacher in the public schools before coming home when pregnant with my middle daughter (2002), and since then I’ve always been a homeschool mom. Now I have a new role to learn. It’s been fun for me, my teen, really the whole family.

I’m interested to hear from other homeschool families that have gone this route. How did it change your family dynamic? For the better or worse? Pros/cons? Was it all your homeschool child expected? My daughter came home her first day and was like, “that was school?” She was underwhelmed as I think she’d built it up in her mind over the course of her lifetime. Not that school is a bad thing, but just different than she expected it to be. She is however enjoying the challenge.

I wasn’t quite sure I was going to share this here, but it’s a huge part of our life and I really can’t imagine keeping it all to myself. I love sharing recipes with you guys, but I miss more of my personal posts and pictures. That’s what keeps me visiting so many interesting blogs….I love reading about your life! So thoughts on that? Would you like to see more of these types of posts? They wouldn’t be instead of my weekly recipes….it would be “extra.” Please share with me. I want to hear from you. 😉

Pumpkin spice belgian waffles ~ a fall favorite!

Pumpkin Spice Belgian Waffles
I’m so excited to be here today sharing these waffles with you all! It’s very rare indeed when I’m able to get something up on the blog so quickly after making them. But they are that GOOD, and it’s almost FALL and all things PUMPKIN…..so here I am! They have a wee bit of a story behind them. My middle daughter (10) has been asking me off and on for probably at least a year (and what would seem like 3 years to her) to make waffles. But you see….I’m a creature of habit. I love pancakes, and I have a nice skillet to make a whole bunch of them at one time.

I also remembered the last time I made waffles it seemed to take an eternity! Not just the one waffle at a time scenario, but also the only recipes I seemed to encounter involved whipping your egg whites until they were nice and fluffy and folding them in. Don’t get me wrong….they were good, but it was quite labor intensive…and remember….I love pancakes!

So last week when she asked for waffles, she was quite shocked when I told her YES!! I felt it was time to honor her wish. I did a quick search on my iPad for what I hoped would be a belgian waffle recipe with no egg white beating. To my delight and surprise…..my google search revealed an EASY recipe from my dear friend Jennie Perillo’s site! Better yet…..NO egg white beating!!

My friends…these waffles are EASY & GOOD! Try them for yourselves. Fast forward a few days later, and I was craving pumpkin something fierce. Pumpkin starts calling my name during the summer you see, and I hold out as long as humanly possible. Here it was almost September, and I couldn’t do it anymore. I remembered Jennie’s easy waffle recipe and used that as my base. She’ll be your friend forever now that you can have tasty waffles anytime without all that egg white beating nonsense.

I was a little nervous because I had this vision of pumpkin spice waffles in my head, but once you start creating a recipe….well, anything can happen. I did a quick google search of pumpkin waffles to get an idea of how much pumpkin one would use and if I needed to decrease the milk. As you can see….they turned out amazing!! They’re easy….a bite of heaven on a plate. I can’t tell you how good these are…you’ll have to try them for yourselves. Let’s just say I’ve made them twice more since the first time. Crispy on the outside and soft and chewy in the middle….pumpkin, spice, and fall all wrapped up into a warm delicious bite!

You must make these now, and let me know what you think! My hubby kept exclaiming that our kitchen smelled like Thanksgiving….and for hours afterward. And who wouldn’t want that!? 😉

Pumpkin spice belgian waffles

These pumpkin spice belgain waffles are the perfect taste of fall. Quick & easy to whip up!
Ingredients
  • 1 cup flour
  • 1 Tbsp baking powder
  • ½ tsp sea salt
  • ¼ cup + 2 Tbsp brown sugar
  • 1 tsp cinnamon
  • ¾ tsp nutmeg
  • ½ tsp cloves
  • ¼ tsp ginger
  • 1 cup whole milk
  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup melted butter
  • ½ tsp pure vanilla extract
  • 2 tsp pure maple syrup
Instructions
  1. In a large bowl add flour, baking powder, salt, brown sugar and spices and mix well.
  2. Add milk, eggs, pumpkin, vanilla and mix just till combined. Mix in melted butter and maple syrup, and mix until just combined.
  3. Preheat waffle iron. Spray with olive oil.
  4. Pour onto waffle iron until you have a light coating. If you pour on too much, it will leak out the sides. This might take trial and error the first waffle or so.
  5. ** This batter made 4 large belgian waffles **

Pineapple Dole Whip ~ vegan & dairy-free {A Disney Favorite!]

If you’ve been to Disney then you know all about their famous Dole Whip! My first time sampling Dole Whip wasn’t at Disney though….it was at the Dole Plantation back when I lived in Hawaii. Imagine to my surprise and delight to discover this treat at Disney back in the 90’s. My hubby & I have taken our 3 girls to Disney too many times to count. We’ve been blessed with yearly passes 3 times now. Yes…we’re Disney fanatics! Thank goodness we live in Florida. 😉 All 3 of my girls now consider the Dole Whip a “must have” when we go to Disney. You can purchase it at Magic Kingdom’s Adventureland across from the Swiss Family Robinson Treehouse, and also at the Polynesian hotel where you get to “make your own dole whips.” Now you can make it at home….of course, it’s not exact, but it’s pretty darn close!

This accidental treat happened in my Vita-Mix last month. If you follow me on Instagram, then this picture probably already looks familiar to you. I love sharing my food pictures there, but sometimes I feel a little guilty. For instance…I knew the recipe wasn’t exact yet, and I wanted to make sure I had the chance to tweak it and recreate it again before sharing it here. I feel bad when I make you wait like that. I hope you forgive me.

When this incredibly smooth pineapple creation hits your tongue, I’m sure you’ll forget all about the wait, and just feel blessed to have it now! It’s not hard to make, but I do think you’ll need a powerful blender to chop through your frozen fruit. Part of the trick is not to use too much liquid otherwise it will turn out more soupy than frozen. Water will probably work in a pinch, but the only two liquids I used were coconut milk (full fat…not light) and coconut water. Not at the same time, but when I went to make it the other night I was out of coconut milk and the coconut water worked just as good. I do think I’d lean toward the coconut milk as it’s creamier and thicker.

About the sugar. It’s not needed or you can use a natural sweetener probably. Pineapple is sweet enough, but because I wanted more of a true sorbet experience, I added a couple tablespoons the second time I made it, and it was just perfect. If I’m eating clean or on the Daniel fast or Daniel Plan, then I really won’t miss the added sugar so you be the judge. Add it or not…it didn’t affect the final outcome.

Ingredients
  • 2-3 cups frozen pineapple (amounts are forgiving)
  • ½ can full-fat coconut milk or coconut water (or plain water would probably work)
  • 2 Tbsp sugar (optional, leave out for Daniel Plan & Whole Life Challenge)
Instructions
  1. In Vita-Mix or powerful blender add frozen pineapple and coconut milk. These amounts aren't set in stone. If it doesn't seem firm enough for you, add more frozen pineapple. If it seems too firm, add more coconut milk.
  2. Add sugar or other natural sweetener of choice. Or omit if you're keeping your eating clean. It was still sweet without it.
  3. Blend and spoon into serving dishes and eat immediately.
  4. Makes 2 large portions or 4 small portions. ENJOY!!

Cheesy Chicken Tortilla Soup {Secret Recipe Club}

I’m super excited to share with you today’s Secret Recipe Club post! Whenever I find a recipe that’s easy to make for dinner and is also a hit with my girls….I’m sold! And you will be too. This month I was assigned The Avid Appetite. What a gem! I’ll be a reader from now on. Rachel blogs from her New Jersey apartment, and likes to explore nearby New York City with her husband Shaun. You know me…I love New York, so that was a hook for me. A cute couple and new parents, they share a zest for life and an enthusiasm for travel and trying diverse foods.

Today’s Cheesy Chicken Tortilla Soup is easy….did I mention it’s EASY? My whole family loved it! I loved how cheesy it was, and that her recipe uses REAL cheese! I loved it with medium cheddar, but it’s adaptable to any type of cheese you want….monterey jack, pepper jack, colby jack…you name it! Hope you’ll stop by and check out Rachel’s blog. Cheesy Chicken Tortilla Soup {Secret Recipe Club}

Ingredients
  • 1 Tbsp olive oil
  • 1 red pepper, finely diced
  • 1 onion, finely diced (I used half of a large vidalia)
  • 2 Tbsp butter
  • ¼ cup all-purpose flour
  • 1 cup whole milk
  • 3 cups chicken broth
  • 1½ cooked, boneless skinless chicken breasts, cooked (I used 2)
  • 2½ cups medium cheddar cheese, shredded
  • 14 oz can Mexican Rotel
  • ½ tsp chili powder
  • salt and pepper to taste
  • Tortilla chips, for topping
  • Sour cream, for topping
Instructions
  1. In the bottom of a large pot, heat oil over medium heat and add peppers and onions. Saute until soft.
  2. Add butter and melt.
  3. Whisk in the flour until combined. Cook for about a minute being careful not to let it burn.
  4. Whisk in the chicken broth and milk and bring to a light boil. Simmer for 5 minutes.
  5. Once simmering, lower the heat and stir in the cheese. Stir until melted completely.
  6. Add in chili powder, salt and pepper.
  7. Add in the chopped, cooked chicken (I made mine in the convection toaster oven) and Mexican Rotel (use regular rotel or diced tomato if you don't want it spicy).
  8. Serve in bowls and top with sour cream and crushed tortilla chips.

Bite-sized ice cream oatmeal sandwiches & Walkers Shortbread giveaway!
