Homesick Texan Cookbook Spotlight & Cook-off Series ~ Pork tacos & Austin-style black beans

When Heather of Girlichef contacted me about whether I wanted to be a part of “The Homesick Texan Cookbook Spotlight and Cook-off” I was beyond ecstatic.

Yes, yes….of course I do! What a neat project to be a part of! Over the next 4 weeks a group of select bloggers will be cooking out of Lisa Fain’s new cookbook. Lisa Fain is a seventh-generation native Texan who was transplanted to New York City when she was 25. As excited as she was to be in the big city, she soon discovered that the food she grew up with just wasn’t available. This led her on her journey to create that food and document it on her blog of the same name The Homesick Texan.

After several weeks anticipating the arrival of her cookbook, it arrived hot off the presses, literally…overnighted direct from the publisher in New York. I’d like to pretend that this is a normal occurrence around here, but I’ll admit to being a bit star struck at the thought that a cookbook not released yet to the public arrived on my doorstep and with a personal note to me. I think you’d be a bit giddy too! Seriously, how cool is that?

You know I’m passionate about cooking and food, and lately I’ve even mentioned cookbooks, but did you know how much I love to read? Yeah, this was beyond cool! My girls thought it was pretty neat too and gathered around me to see the cookbook. What a beauty! A big thank you to Hyperion for sponsoring this cook-off and sending a free copy to me!!

As I thumbed through the pages, I was struck by all the beautiful photos….what a gorgeous cookbook. But it’s more than beautiful, it’s chock full of amazing recipes I can’t wait to try! Over 125 of them, and I’ve already made a list of at least 25 recipes just begging me to sample. Fortunately for you guys….we get to share a few of them with you even though the book won’t be released until September 13th. It’s clear that Lisa’s heart and soul went into this cookbook, and I’ve really enjoyed getting to know her through its pages. I think you will too!

And don’t forget to stop off and visit all of my cooking mates on this journey. Heather listed them all in one place over at her site Girlichef. Heather’s site is one of my very favorite reads so be sure to spend some time on her blog too! The first 2 weeks we’ll all be cooking the same recipes, the third week we get to choose our own and the fourth week we’ll write up a review of the cookbook. See….I told you I had some exciting news!! Now onto the recipes…..

The recipes Heather picked for this week are Pork Tacos, Dallas Gas Station Style & Austin Style Black Beans.

I was excited to try the pork tacos since I seem to have sampled tacos every other way, but pork. We’ve had fish tacos, shrimp tacos, steak tacos, lentil/bean tacos and of course beef tacos….but never pork tacos. I knew hubby would be excited, and he was! Having been to Texas many times on business, he was able to declare the taste was authentic after last night’s dinner.

The black beans cooked for 2 1/2 hours on the stove, and were my first ever successful attempt at dried beans from scratch. I’ve never been able to get the method down and my beans were always somewhat hard no matter what I tried. But not this time. Not only were they soft…but after all that time spent mingling with chipotle peppers, carrots, onions, garlic, cilantro, cumin and lime they were phenomenal in taste!

A couple tips for you before you get started with the recipes below.

Even after checking Whole Foods, I wasn’t able to find the pasilla chiles needed for the tacos. Several other bloggers recommended small mexican markets (which we have many), but all the markets I knew of were already closed for the day. I ended up heading back to Whole Foods on a recommendation to substitute with ancho chiles instead. Another first for me was buying and rehydrating dried chiles. I love trying new things in the kitchen!

Also, even though Lisa was very clear when stating “two canned chipotle chiles” for the black beans…my inexperience working with chiles canned or dry led to a spicy blunder. I misunderstood that to mean two cans of chipotle chiles. Being nervous of that kind of heat, thankfully I used only a half a can….but that was still more than the “two” chipotle chiles called for and was super spicy. I was able to fix my mistake by mixing our black beans with additional beans once they were cooked.

 Pork Tacos, Dallas Gas Station Style ~ 4 to 6 servings

For the pork ~

4 dried pasilla chiles, stems and seeds removed (use gloves)
2 lbs. pork shoulder
1 canned chipotle chile in adobo (1 chile out of can)
4 cloves garlic, chopped
1/2 tsp dried oregano
1/2 tsp ground cumin
small pinch of cloves
1/4 cup orange juice
1/4 cup pineapple juice
1 Tbsp white vinegar
2 Tbsp olive oil
salt, to taste
1 Tbsp vegetable oil

For the tacos ~

6 jalepeno chiles
Tortillas, either corn or flour
1/2 cup chopped cilantro
1/4  medium yellow onion, diced
1 lime, cut in wedges
Salsa, for serving

1. In a dry skillet heated on high, toast the pasilla chiles on each side for about 10 seconds or just until they start to puff. Fill the skillet with enough water to cover chiles. Leave the heat on until water begins to boil and turn off the heat and let the chiles soak until soft, about 30 minutes.

2. While the pasilla chiles are soaking, rinse the pork and trim the fat. Cut into half-inch-size pieces.

3. Once the pasilla chiles are hydrated, drain and rinse the chiles. Place the chiles in a blender along with the chipotle chile, garlic, oregano, cumin, cloves, orange juice, pineapple juice, vinegar, and olive oil. Blend until a smooth puree forms. Taste and add salt.

4. Toss the diced pork with the chile puree, place in a non-reative container, and store covered in the refrigerator for 8 hours.

5. Before cooking, let the pork sit at room temperature for 30 minutes. To cook the pork, heat the vegetable oil in a large skillet on medium. Fry the pork in the skillet for 15 minutes, stirring occasionally.

6. While the pork is cooking, place the jalepenos under the broiler and cook for 10 minutes, or until blackened, turning once. Serve pork in warm tortillas, topped with cilantro and onions along with the roasted jalepenos, lime wedges, and salsa on the side.

NOTE: Ask your butcher to cut you a 2-pound pork shoulder roast if one is available. Avoid using pork tenderloin, as this is a very lean meat and won’t taste quite as good.

Austin-Style Black Beans ~ 8 to 10 servings

1 pound dried black beans
1 Tbsp vegetable oil
1 medium yellow onion, diced
1 carrot, diced
4 cloves garlic, minced
2 canned chipotle chiles, in adobo, chopped (2 chiles out of can)
1/2 cup chopped cilantro, divided
1/2 tsp ground cumin
1 Tbsp tomato paste
1/4 cup lime juice
salt, to taste

1. Rinse and sort through the beans, removing any stones and shriveled beans.

2. Place the beans in a large pot and cover with 1 inch of water. Bring to a boil and then cook for 15 minutes.

3. Drain and rinse the beans in a colander in the sink.

4. Return the empty pot to the stove and on medium-low heat, warm the vegetable oil. Add the onions and carrots to the pot and while occasionally stirring, cook until the onions are translucent and the carrots are lighter, about 8 minutes. Add the garlic to the pot and cook for 30 more seconds.

5. Return the beans to the pot, along with the chipotle chiles and 1/4 cup cilantro. Cover with 2 inches of water, bring to a boil, and then turn the heat down to low and simmer uncovered for 1 1/2 hours.

6. After 1 1/2 hours, add the remaining cilantro, cumin, tomato paste, and lime juice. Taste and add salt. Cook uncovered for 30 more minutes or until beans are tender (the ultimate cooking time will depend on the freshness of your beans). When done, smash a few beans against the side of the pot with a spoon to thicken the broth. Stir the pot and serve.

Peach Pecan Pancake & a healthy living challenge!

One morning a couple weeks ago I was craving pancakes. Oh pancakes have such a pull, don’t they? And you know I’ve been trying to focus on more protein and less grains….low carb really seems to agree with my digestive system and the way I feel. I admit the sugar monster is really starting to grip me again, so I want to get strict with my eating. I know I can do it!! Anyone want to join me?

We can commit to 1 week of clean eating or whatever that means to you and getting in exercise daily (or at the very least 3-5 times this week). You know with just one week under our belts, we’d start feeling GREAT and the hard part would be done! That hurdle of just beginning again, you know?

So who’s with me? My birthday’s coming up September 11th, and I want to look and feel my best. Ideally I’d like to lose about 5-8 pounds before getting into holiday mode. It’s the perfect time, and most of you are about to get gorgeous weather to get outside for daily walks! Come on….we can DO this!! What do you say? I need some accountability! I’m going to read my posts under low carb and clean eating in the category section over in the sidebar to get motivated.

Now let me tell you about this pancake! I remembered these cream cheese pancakes and how the texture was achieved with eggs and cream cheese. I figured I could do something with a nut and oat base and feature these peaches. So I embarked on one big skillet pancake….and it worked! Now it’s delicate, so there is NO flipping this pancake. You have to use an oven safe skillet and finish it off under the broiler, but wow….I was sold! I think you’ll love them as much as I do!

This pancake may or may not fit in with your eating plan and the challenge above, but if it doesn’t….book mark it for later or change it up to suit you. And you can use another fruit when peaches are out of season. All I know is it’s now one of my favorites. It’s easy, tasty, filling, low carb and gluten-free. What’s not to love?

Peach Pecan Pancake ~ Low carb & Gluten-free!

Ingredients
  • 1 peach
  • ⅓ cup oats (gluten-free if needed)
  • 1 egg
  • 1 Tbsp sugar or honey granules (half the amount for lower carb)
  • 2 Tbsp pecans, ground
  • 1 Tbsp cream
  • 1 Tbsp almond milk
  • Sprinkle of cinnamon and nutmeg
  • Pinch of sea salt
Instructions
  1. Slice peach. Put aside a few slices to top the pancake with and dice the rest. Save pit.
  2. Partially grind oats in coffee grinder. Set aside.
  3. Grind pecans in coffee grinder. Set aside.
  4. In medium bowl, beat 1 egg vigorously.
  5. To egg, add oats, ground pecans, sugar, nutmeg, cinnamon, salt, cream and almond milk. Mix well.
  6. Add in all diced peaches. Now sqeeze the peach bit over the bowl to extract all peach juice.
  7. Butter and heat oven-proof skillet to medium heat. Add batter to skillet and make sure it spreads out. After the bottom is cooked finish off under the broiler keeping a close eye not to burn.

My splurges at Ikea & tips to stay on a budget


I get teased by my friends for being “too” frugal. Is it really too frugal to have the same bathroom rugs for 17 years before throwing them out a few years ago? Am I the only one? I mean they were still in great shape and did the job. Plus bath rugs are expensive, don’t you think? I seriously think I had heart palpitations when the set of 2 that I really liked were $40! Sometimes I think my “money mindset” is still set back in the 80’s.

Or what about the fact that last year I was beyond thrilled to finally get new kitchen mats for in front of the stove and sink and a few new packages of dishtowels. I posted a status on facebook about it being the little things that make me happy. I got a few funny comments. Am I the only one that stays out of stores unless I need something?

You know like Target or Walmart. I very rarely go….but when I do I have a list of specific needs, and by needs I usually mean something for the kids: like clothing, shoes or school items, and even if I see things I “want” or maybe we kinda need for the house….I can’t justify spending the money if they aren’t a “true” need. Shopping for me is not a recreational activity….I’d rather be outdoors in the fresh air, not cooped up under flourescent lighting.

I think it’s important to recognize true wants and needs. It’s very easy to walk into one of those stores and drop over $100 by not really thinking about every item you put in the cart. Asking yourself a few questions…do I already have this? If not, do I really need it or is there something else I can make work at home? Can we get by without it till next month….sometimes just delaying a purchase helps your budget that month OR makes you realize you had something else that would work at home….OR that you already had it at home and had forgotten about it. 🙂

One of my very favorite mottos that I really strive to live by is, “Use it up, wear it out, make it do or do without.” I think it’s an old adage from the Depression era, but really holds true today.

All this background so you’d understand the sheer JOY and fun of my little trip to Ikea with Michelle last April before we headed home from the Food Blog Forum in Orlando.

I’d heard of Ikea years ago from my cousin and good friend Amy. She’d always stop into Ikea when she was in Chicago. I finally got to check one out for myself a few years ago when we were making trips down to Ft. Lauderdale every week for my little one’s helmet adjustments. My mom and I had so much fun!

If you’ve never been, Ikea is known for quality items at budget friendly prices. They have everything…and I mean everything! Everyone that visits Ikea becomes a new convert. They also have a place to drop your kids off for childcare if they are certain ages/heights so they can play while you shop….gotta love that! And don’t even get me started on their little cafe. Yes, we even had lunch there, but I’ll have to save that post for another time.

So when I spotted the Ikea next to the mall on our way out for the Saturday night mixer, and then found out Michelle had never been to one….I knew we’d have to hit it up together! She was game and I’m SO glad we did! Michelle was in heaven!! See? Another convert! I had so much fun watching her have fun….you know it’s the little things with me. 😉

Since I was away on my first “foodie/girlfriend” weekend and my first “girlfriend” weekend ever, I let myself get a little crazy when loading up my cart. I still went and put quite a few things back, and that’s not to say I didn’t really think through each purchase….but it was SO much fun just buying stuff for the kitchen that made this cook happy!! Just look at all my finds…..all this for $60! Also included in this price were 2 gifts (toys…see everything!) I picked up for my twin baby nephews. I told you you’d love the prices!!

The skillet you see pictured was a definite need since my other large one was warped. Did you know not to get a hot skillet wet or it warps the pan? I sure didn’t. So glad I know now! The tart pan was a purely whimsical want, but boy have I used it, and you can’t beat the price at $7.99! Plus I love how cute it looks, don’t you? Those spatulas and pasta spoon were under $1 each.

These really cool glasses were only 59 cents each! YES….59 cents! It took all my self-control to not pick up 10 of them!

What about these colorful and cute sauce bowls. I use them to whip up dipping sauces almost daily. There were 4 in a pack for something like $1.99 or $2.99.

What about this cute little creamer? 2.99 I think….Michelle bought the same one!

Paprika chicken zucchini soup & love of Pinterest

Ahh….I have a nourishing meal for you today. I know it’s been awhile….I seem to have gotten on a breakfast and dessert kick. I still have a few treats to share with you, but they aren’t overly sweet and one spotlights fruit so well. I do have an exciting new series starting up late next week! I can’t wait….I’m bursting to tell you, and I know you’ll love these recipes as much as I do. All I can say is it involves a group of food bloggers….a 4 week series we’re all involved in, and you’ll meet some new faces. What’s not to love?

Now you know I’ve been having fun with zucchini this summer, and the great thing is my  kids have been watching me. I think the love of this veggie is catching. All my girls have declared this soup their favorite…except my middle girl said, “it’s my favorite after Zuppa Toscana.” Even my “I don’t touch veggies” hubby was hooked, so I’m kinda proud of this Creative Kitchen original!

I really find it hard to believe that August is almost over (whew…we dodged Hurricane Irene), but at the same time I’m thrilled that fall is around the corner and we’ll get to dive into a whole new season of food. Living in South Florida will delay the cooler weather till late October or early November, but that doesn’t stop me from switching gears mentally. Fall is my favorite season as I’ve mentioned before, and I can’t wait to share it with you. I’m already dreaming of pumpkin, apples, comfort food, gingersnaps, baking and have even added new cookies to try on my Christmas cookie list. 🙂

Paprika Chicken Zucchini Soup

A winner with all 3 of my girls, and even my non-veggie eating husband. Try this comfort in a bowl.
Ingredients
  • 4 boneless chicken thighs or 2 chicken breasts
  • 4 zucchini, peeled, quartered and sliced thinly
  • 1 onion sliced and carmelized, then dice
  • 1½ stalks celery, diced
  • ½ stick butter or as needed to saute veggies
  • ½ Tbsp garlic, minced
  • 3 quarts chicken stock or broth
Instructions
  1. Coat chicken with paprika, both sides.
  2. Roast chicken or cook in skillet and set aside to cool.
  3. In large skillet carmelize onion and set aside.
  4. In large soup pot, using butter as needed...saute zucchini until cooked to desired doneness. Add in celery and continue cooking.
  5. Add chicken stock or broth to soup pot.
  6. Cut or shred chicken and add to soup.
  7. Add in garlic and carmelized onion.
