Steak kebabs & our hometown honeymoon

As you know hubby and I celebrated our 14th wedding anniversary last month which is what inspired the sharing of our love story. My mom was scheduled to watch our girls overnight back in May, but various things (including a funeral) kept us from going that weekend. She graciously agreed we could do it another weekend, but the biggest blessing of all was that she took all 3 of them to her very small condo so that we could have a “hometown honeymoon” in our own home. This is a first! It was very nice to have access to our stuff, and not have to pack up and go anywhere. Yay…thanks, Mom!!

So after we dropped them off Saturday in the early afternoon, we headed straight here….

And spent 3 relaxing hours floating over waves together with our pool noodles and also chilling in chairs on the sand….one of the benefits of living in paradise! It was SO nice not to have to play lifeguard for a change. 🙂

Then we drove over to Whole Foods to pick up their hormone-free chuck roast (on sale for $4.99 a lb) for our dinner. I’ve mentioned before how great their meat is…even my hubby can tell a difference with all the other meat he buys. It really is tender and flavorful, and surprisingly to most…the chuck roast is the perfect cut for our kebabs. I order it right out of their meat case, and they are happy to cut it into 1 inch cubes for me while I pick up a few more items.

Funny enough on our way out of Whole Foods, we bumped into my mom and our 3 girls. They were on their way to the outdoor promenade to dance to live music. Living in South Florida…we are blessed with many beautiful outdoor shopping areas that also offer weekly music and entertainment year round.

We marveled as we walked into a clean and QUIET home!! We put on some music, chatted as we unloaded groceries, grabbed quick showers and set about making our steak kebabs…I could get used to this! And what was really cool was that when I was making our special steak sauce (I used stevia instead of sugar), hubby grabbed my new camera and headed out to the grill to snap some pictures….I think I’m rubbing off on him. 🙂

He’s been so interested lately on helping me with photography…whether it’s periodic advice or tips on the camera or looking at all my food pictures and telling me which one I should select. I love having his input!!

When the kebabs and special sauce was ready…we sat down for “dinner and a movie.” We watched Morning Glory with Harrison Ford and Diane Keaton. It was pretty funny.

I also made a special low carb dessert for us of organic strawberries and homemade whipped cream. Mmmm…..it was tasty! I made the whipped cream with 1 cup heavy whipping cream, 2 tsp pure vanilla and ½ packet of stevia. Even hubby loved it!

After the movie, hubby surprised me by wanting to take my new camera up to the beach to try to get some night shots and look for sea turtles. Now that I’ve acclimated myself to being a morning person, I have to say that even though it was only 10:30 I was already very tired. We did manage to get home a bit before midnight…and I’m still surprising myself….I went straight to bed and fell asleep right away. What is happening to me….I still can’t believe how early I’m getting up…even over the weekend. I’ll be sharing soon all about my cooking class last week and about a mozzarella caprese omelette I’ve been enjoying!

Chili lime chicken romaine salad & more rabbit drama!

Good morning Monday! I hope you all had a great weekend! I sure did…hubby & I finally celebrated our anniversary with an overnighter (no kids)…but that’s another post for another day. Last week was a big week…two different nights I’d gone to bed without my whole family home and safe. I’m sure you other moms can relate. It’s an unsettling feeling, especially for me “a night owl” by nature. I’m always the last one up making the rounds, checking to be sure that everyone is cozy and things are locked up tight.

 Since I’m not a morning person, I never thought I’d be awake enough to formulate coherent thoughts…let alone write. And even though I was a night owl…I was always a little too tired to write at night. Plus I’ve read over and over how much better it is for our bodies to get to bed before midnight, and the hours you get before then really aid in weight loss. Nice bonus! Anyone else learn to switch their natural sleeping rhythms around like that? I’d love to hear your experience.

I’ve been getting to bed much earlier than my normal, and setting an alarm…yes, an alarm. It’s amazing the pull I have to get up early and write while everyone is fast asleep. It has been unbelievably easy to jump right out of bed! I’m lured by the peace and quiet of the house, and the guarantee of a good 45 minutes to an hour of alone time to write.

Now on to the rabbit drama…“Ruby the rabbit” that is. Within a week or so of my hubby bringing her home (without my permission or knowledge…remember that story?), he realized that she’d have to get spayed. Though we have no other rabbits in the house, it turns out she has a much better chance of not getting cancer, and it keeps her easy going as she gets older. Originally hubby could not find a vet that was under $300 for the surgery, and he then realized his big mistake getting a rabbit. When he got Ruby, he really had no idea that a rabbit for a pet is much like the commitment to having a dog or cat. Turns out she’s much easier than having a dog or cat care wise (she’s completely litter box trained), but she still needs vet care on occasion.

So thankfully he found a place that would do her surgery for $65, and they are volunteers that perform surgery during off hours. So he had to get her dropped off around 6:15, and her surgery wasn’t until 9pm. He drove out in the country to a house and dropped her off. They told him they’d call when her surgery was done. So it was strange in that regard that it was night time out at a gated compound way out in the country.

What really freaked me out a bit was when he called on his way home from picking Ruby up. After 17 years being cat owners I was not prepared when he told me, “surgery went fine, but she’s still asleep.” I was like, “huh, they let you take her?” He said that it takes a bit longer for rabbits to wake up. Really?? Scary, right? What ever happened to making sure they WAKE up and monitoring that? Guess that’s what bargain price of $65 bucks gets you….haha. So I asked him about the instructions they’d given. Get this, no instructions…not a handout or even verbal. Can you believe it?

Surprisingly, I went to bed before they got home. It was 10:20pm, and I couldn’t keep my eyes open any longer. I really must have been tired to go to bed before my honey was home safely. Even more surprising was that I conked right out. The next morning I was freaked out that I was going to be the one to walk out and see if she were alive  awake in her carrier. I didn’t know she woke up in the presence of hubby the night before, so I was afraid of what I’d find. Thankfully Ruby was alive and well, and is now doing great!

And since she’d to stay in even more of a confined space (the carrier on the way there), she’s now back in her original large dog kennel crate cage instead of her 3 story rabbit condo. I’m excited that hubby has said he’d disassemble her too big for our house mansion, and she can move back into the living room in just her smaller cage.

When she’d moved in the girls’ room it was out of sight, out of mind. Though we’d still have her roam the living room a few hours every night, it was a huge deal to remember to bring her out. Somehow her mansion became her prison, but now she’ll have even more social time with the family…and the girls can reclaim their room.

An even bigger adventure was this past Friday night when my 12 year old spent her first night away from home that she wasn’t at a friend or family member’s house. She had a “lock-in” at the church. I thought we’d be fine, but I wasn’t prepared for the onslaught of emotions I felt off and on throughout the evening, but mostly right before bed. I wasn’t crying, but had a bit of anxiety on the inside. Can you mamas relate?

At times the feeling was so strong I felt liked I’d just have to go pick her up. I didn’t…I went to bed at 11:15, so tired but also feeling unsettled that my sweet girl was not home with us! I’d wished we’d sent her with her daddy’s phone so I could just check in and hear her voice…and know that she was feeling okay with the situation. Hubby reminded me that she’d call if that were the case, and that’s she was having a blast. She never did call…I slept through the night, and got a text from her around 7am the next morning to remind me to pick her up. She managed to stay up ALL night, and said it went by really fast! And she was all smiles when I picked her up.

So onto the recipe…worth the wait I promise. Last week I was looking for a meal using the chicken breasts I’d pulled out of the freezer. When thinking of flavors I wanted to use…lime kept popping up. So I put a little olive oil in my skillet and began to heat it over medium low. With the chicken breasts laid out on a plate I squeezed lime juice over the top, and then I sprinkled them with chili powder, cumin, sea salt, and pepper. I then placed them in the skillet seasoning side down, turned the heat to medium high and seasoned the other side. Cooked them for about 3-4 minutes on each side, and was still a bit paranoid about whether they were done. They were about an inch thick, and I’m not used to cooking whole chicken breasts. More often than not, I cut chicken up so it cooks faster….and so I don’t have to deal with trying to figure out whether they are done. 🙂

I sampled them as I cut them up for my girls to eat, and realized that though tasty I’d rather have them as part of a salad. So as I washed and chopped romaine, diced red onion and a tomato, I began thinking of a sauce or dressing I could use. I started with about ½ cup mayo, then added in about a tablespoon of Dijon mustard and about 2 teaspoons or a little less of ketchup. My first time using ketchup since it’s not allowed in Atkins induction, but I figured only about half that sauce or less was ending up on my plate. I added in a sprinkling of sea salt. You can always mix up anything you want and taste as you go.

My huge plate full of salad ended up being amazing!! I can’t wait for my leftovers for lunch today…

Chili Lime Chicken Romaine Salad

An easy refreshing salad for the summer!
Ingredients
  • Chili Lime Chicken breast, sliced
  • for Chicken ~ 1 lime, chili powder, cumin, sea salt, pepper)
  • Romaine Lettuce chopped
  • Red onion, diced small
  • Tomato, diced small
  • Mexican cheese, shredded
  • Special sauce (1/2 cup mayo, 1 Tbsp dijon mustard, 2 tsp ketchup, sea salt)
Instructions
  1. Heat a bit of olive oil in skillet. Squeeze lime over chicken breast. Sprinkle chili powder, cumin, sea salt and pepper over chicken breasts. Place chicken in skillet.
  2. Cook chicken over medium heat 4-5 minutes per side or until done, and when you flip season the other side.
  3. Slice cooled chicken for salad.
  4. Chop romaine lettuce, dice tomato and onion.
  5. For sauce ~ mix ½ cup mayo, 1 Tbsp dijon mustard and 2 tsp ketchup.
  6. Assemble salad as desired and enjoy! Save any leftover dressing for another salad.

It’s all about the sauce!

I’m having quite a busy week, with so many unexpected twists and turns…but it’s been FUN!! Since not all our friends homeschool, June becomes the month where we plan and get together with various friends that we don’t see as often during the school year. I had a chance to catch up with a good friend on Tuesday, our kids had a blast and my middle and youngest two didn’t want to part ways with her middle and youngest. It was cute to see my 3 year old take on such an emotional opinion about leaving. She was visibly upset, but not in your typical tantrum sort of way. A promise that we’d see them Friday helped to get her to the van.

A pool playdate yesterday added a bit of drama….but thankfully everyone is okay. Isn’t there always the potential for that when kids and water are concerned? I hope my poor friend Michelle recovered, but glad she had a quick response! It was great to have time with other Mops moms outside of Mops, and kids always love the chance to swim. Our hostess was kind enough to open her lovely home, and went above and beyond in feeding us all lunch…an unexpected blessing.

Tomorrow we’ll be hitting up the waterpark. I love it because it’s not one of those massive ones with tons of kids, its the smaller one at our local rec center but still has plenty to keep them busy…like an entire playground in water for the youngers, and big tunnel slides and a huge pool for the older ones. They also just put in a rock climbing wall, a splash pad and a waterslide. The kids are excited to see those! Next week we have VBS, and I can hardly believe that takes us through the halfway mark in June. How is that possible? I hope you’re also enjoying your summer!

I won’t leave you in suspense any longer, and I’m SUPER excited about my plans for tonight!! I’m taking a hands-on cooking class with fellow food blogger Michelle down in Boca Raton. It’s entitled “The Mother Sauces” and we’ll be making many different meals that highlight various sauces such as hollandaise, béchamel, sauce vin blanc, sherry peppercorn sauce and a tomato cream sauce. You know what a “sauce” girl I am!!

Not only do we get to cook in a professional kitchen, but after we cook….we get to sit down and have a nice dinner with our prepared foods. Mmmm…… and I hear there’ll be wine too! I’ve been looking forward to this for awhile. This will be our first “foodie” event since our weekend at Food Blog Forum Orlando, and our first time getting together without our kids since then. Be assured…I’ll get lots of pictures so I can share the experience with you guys!! And since I’ll be picking and choosing which foods to use carbs on, I’m hoping that they’ll have something like this to finish off the meal….

Don’t worry…I’m not abandoning my 2 week Atkins induction experiment. This event was already on my calendar before I started, and it’s only 1 full day ahead of my 2 week mark. Red wine is only 2 carbs for 4 ounces, and I am usually only a 1 glass girl anyway. I won’t be eating the pasta or bread, and there is plenty of protein on our menu that’s allowable for me. Sugar may slip in with some of the sauces (not sure yet), but I’m definitely eating a dessert if there is one! That’s probably where I’ll get the majority of any carbs from. Then tomorrow morning back on track. I’m starting to learn how to transition into the ongoing weight loss phase where you start allowing more carbs, so the timing is perfect with this actually.

I do have one fashion dilemma though…maybe you can help me. Apparently I have to wear closed toe shoes in the professional kitchen (safety, cleanliness). Which poses a problem for this Florida girl…I only have open toe shoes (other than my running shoes and my fur-lined winter clogs). I find the safety part of it kinda funny since I’ve been cooking barefoot in my kitchen for as long as I can remember, and I haven’t injured my toes yet!! 🙂 It really must be for the cleanliness then? Hmmm…still trying to figure that one out. The only thing I can come up with is maybe bringing my stylish pair to change in to after we’re done cooking and it’s time to eat? Do you all have any ideas for me?

Cream Cheese Pancakes ~ a sweet low carb alternative!

I hope everyone had a good weekend! We sure did…a perfect mix of “couple time” and “family time.” It’s been so nice now that the older girls are 8 & 12, hubby and I are starting to carve out some “couple time” here and there together. Last week we took our first walk in the neighborhood ALONE. It’s amazing how much we can discuss without all the interruptions. If you’re a parent, I’m sure you know what I mean. 🙂

I can’t believe I’m already on day 10 of my low carb experiment! I will admit the craving for sugar was hard the first couple days, but seriously…after that, it got REALLY easy! I am THRILLED with how I feel!! I have SO much energy, and I feel light. I feel more clear-headed. I’ve also lost inches in addition to pounds. That’s always exciting!

I do see though how the Atkins 2 week induction plan would be much harder for someone used to eating a lot of processed foods and things with white flour, sugar, pasta, bread etc. Since those things aren’t part of my normal diet, and I only drink water and hot tea…it really hasn’t been much of a change for me. But the benefits (as you can see) have been huge!!

If you have some weight to lose, or just want to clean up your eating or feel better, I encourage you to join me! As June progresses I will be adding in more carbs, and eating more “carb controlled” rather than “low carb.” I know being “carb-aware” will be incorporated into my lifestyle, but don’t worry….there will still be occasional treats, and chocolate. I’m so thankful for the antioxidants in dark chocolate!! 🙂 Life is meant to be lived…it’s summer after all, there will be more time spent with friends and vacations, too.

I am grateful to my hubby for starting this up! He and I both feel so much better, and it’s been neat having our way of eating (a huge part of daily living) line up on a similar path. I achieve great joy experimenting in the kitchen now that I am aware of how carbs can negatively affect the body. Hubby loves tasting my experiments. 🙂 Did I mention it’s been fun? Especially to see hubby take an interest in nutrition…we’ve had so many things to talk about.

Speaking of experiments….last Saturday morning I was in the mood for a “weekend” type breakfast. You know it’s when you make up a batch of pancakes or french toast. Oh those are the BEST! Yeah…I don’t miss bread, but breakfasty bread is where I’m really gonna hurt. And since I’m not willing to give those up, I will need to find alternatives.

I found something that really hit the spot. It was good. It really fooled me into thinking I was eating pancakes! And since I used frozen berries for the top, I didn’t even miss the maple syrup. The texture is different, so it’s better to think of these as a different recipe altogether…say, light cream cheese pancakes. But if you are trying to eat low carb, then you will love these!

They are also perfect for those who can’t eat gluten or grain. Of course I’ll keep experimenting to get something closer to a “true” pancake, but don’t those pancakes up there fool you just by looks alone? Those ones up there are the ones I made Saturday! Yeah…the grain-free, low carb ones. Can you believe it?

And here’s what they look like all dressed up with organic berries. Couldn’t you just dig right in?


Low Carb Cream Cheese Pancakes

A satisfying alternative to pancakes when you're following a low carb eating plan. These are also grain-free and gluten-free, and very tasty!
Ingredients
  • 4 oz. cream cheese, softened
  • 2 large eggs
  • ½ tsp cinnamon
  • 1 dash sea salt
  • 1 Tbsp ground flax seed
  • 1 packet SweetLeaf 100% Natural Stevia Sweetener*, optional
  • Frozen berries to top
Instructions
  1. Set cream cheese out to soften an hour or more before you make.
  2. Separate eggs, and beat egg whites till peaks form in your mixer.
  3. In large bowl add cinnamon, sea salt, ground flax and stevia to egg yolks and mix well.
  4. Mix cream cheese into egg yolk mixture, blending well. I did this part in my mixer by transferring the egg white out while being careful not to deflate.
  5. Fold in egg whites.
  6. On hot, buttered skillet pour by ¼ cup portions as you would regular pancakes. Make sure to flatten a bit to shape them into pancake size.
  7. Cook 2-3 minutes on each side on medium low temperature.
  8. Top with frozen berries or thaw berries first. Can also make a homemade whipped topping with stevia powder instead of sugar.
  9. Makes 5 pancakes.
Notes
*Pancakes can be made without stevia.

*A note about Stevia~ The original recipe called for splenda. I’m not comfortable using splenda or artificial sugar substitutes. I love sweetening with natural sugars honey, honey granules, maple syrup, molasses and dried fruit. But none of those are low in carbs, so I decided to finally experiment with stevia. Stevia is a natural growing herb in South and Central America. It’s been used for centuries by those indigenous to that area, as well as other cultures.

I found the SweetLeaf 100% Natural Sweetener packets in my Publix grocery store. It’s finally hit mainstream shelves instead of just health food stores. I’ve been hearing of stevia my entire life…not like the other artificial sweeteners that come and go. That being said…I’m still not 100% sure of how I feel using it for my body. It did not have a bitter after taste as so many have mentioned, but there was still “a taste.”

The pancakes were sweet definitely sweet. Stevia is 150 – 300 times sweeter than sugar. You can purchase stevia in liquid form also. If you are buying the packets and want “pure” stevia, be sure and read the boxes carefully. Some stevia products sold in powdered form are also mixed with other sweeteners. {Disclaimer – this post is purely my own opinion, and I bought, used and reviewed SweetLeaf stevia of my own accord and was not sponsored by Sweetleaf stevia products.}

But what was interesting to me was the effect after I ate 2.5 pancakes. Within a half hour (though the pancakes were very filling), my body felt like it was getting hungry. Sometimes sweeteners (even natural ones) can set you up for a craving. I felt like that’s what was going on. The next morning I ate 1 berry topped pancake as a side dish along with 1 slice of bacon and 1 egg. When eaten with protein I stayed satisfied for hours. I really loved these low carb, gluten-free pancakes. They were a sweet treat without the sluggish feeling I normally get from eating pancakes.

I used 2 packets of stevia, but next time I’m going to try them without any stevia. I think the berries will give sufficient sweetness. If not, then I’ll try using 1 packet. *I linked to the original recipe above in case you want the nurtional information.

* Do any of you have experience with stevia? If you’re used to using alternative natural sweeteners instead of sugar (not artificial ones), what are your thoughts on stevia? My research so far is that it is safe to use, and doesn’t affect sugar levels for diabetics. But like I said…I’m not sure if I’m feeling effects in my body. Have you noticed any side effects from stevia?

Zesty Greek Salad & a low carb update

Today I’m sharing a zesty Greek Salad….doesn’t this look refreshing?

It is! But first an update on my low carb experiment. I find myself still amazed at this new way of eating. Again not much different from my clean eating, just being aware of everything that has a carb in it, and cutting out the grains and fruit for now. Some of the low carb eating plans out there allow 1/2 to 1 cup of berries a day. I needed something sweet, so after suffering for 2 days I began allowing myself about 1/3 cup a day. I was excited to see that they had the Cascadian Farms organic mixed berries (blackberries, raspberries, blueberries) back at Costco for only $9.99 for a huge bag of frozen berries. Yay!! So they were waiting for me in my freezer. I am so glad I picked them up. I eat them frozen, savoring each one. Funny thing is…after cutting out the sugar, they are SO sweet!! It totally satisfies my sweet tooth.

I’m down another pound from the other day which is exciting! I feel GREAT!! No wonder this is pretty much how they recommend diabetics to eat. I’ve found that I have no ups/downs after meal time with feeling sluggish, and have a constant level of energy all day. Last night curiousity got the best of me, and I wrote down everything I’d eaten for the day. Since I felt I’d eaten quite a bit, I wanted to check my calorie and carb count. I was at about 1,400 calories for the day, and 15 grams of carbs eaten. I was happy to see I wasn’t too high or too low for my calories. And since we’re trying to get in 3-5 walks a week, we’ve already gotten in 2 walks since Tuesday. Both after dinner…one as a family, and last night just as a COUPLE alone! Nice….

The misconceptions I’ve had about low carb eating have been turned upside down! Now that I see what I’ve eaten for the past 6 days, it’s definitely not all about how much protein you can eat, and Atkins recommends 4 – 6 oz at each meal. I’ve had a very well-balanced diet of veggies, protein and fat. It’s definitely not low-fat, but slowly in my research I’ve learned how vital healthy fats are for our body. Not only that, but they keep you full and satisfied longer especially when eaten with protein. It’s a win-win!

I also see how carb dependant I was, even though I was eating whole grains and fruit (I just linked to a very interesting post a few months ago…strange my habits were already starting to change!). I always knew I had a strong desire for sweets, so even when I cut out white sugar…I made up for it with the over-abundance of fruit I ate. Yes fruit is good for us, but it’s obvious to me now that I should be focused more on vegetables and consider fruit a dessert or treat….not an addition to every meal. That’s the part that has been HARD for me…grab and go snacks. If you have any low carb snack ideas please let me know by sharing in the comment section below. I always tend to gravitate toward fruit, and now I’m  having to retrain my whole way of thinking. It’s crazy!!

It’s amazing how many salads I’ve been eating. This week alone I’ve had steak salad, taco salad, fried egg and veggie salad, and chicken salad. These have been SO filling and SO good! When eating last night’s taco salad, hubby couldn’t stop raving about how good it was, and all we left out that we normally have were the tortilla chips. Didn’t miss them. I’ll share our taco salad in the future. I can see how this way of eating is fairly easy long term. Of course you up your carbs as you get closer to your weight loss goal, and then you have to play around to see where they level off for weight maintenance. It’s a balance, and will be individual for everyone.

But I find that I don’t really miss the bread and pasta at all. So those can be occasional foods. I will use my carbs (as I increase them) on my thin & crispy whole wheat pizza crusts, fruit, roasted sweet potatoes (LOVE my sweet potatoes) and regular potatoes, a small portion of dark chocolate or small serving of ice cream. Those are the foods I occasionally miss, but it’s funny when you cut out the sugar completely (even natural sugars), the cravings for them subside. I truly do feel like the final piece of the puzzle has fallen into place for me.

Now back to the Greek Salad I promised you. It’s easy to throw together! I’ve always loved Kalamata olives, discovered feta a couple years ago and now that I LOVE tomatoes…this salad is just a perfect combination of greek flavors. Though it’s somewhat similar in flavor to my quinoa tabouleh, I got the idea for this salad after 2 of my good friends introduced me to gyros at the mall when we were celebrating my oldest daughter’s birthday this past March (how is she 12 already?). I’d heard of them, but I’d never tried one and I definitely didn’t know how to pronounce them (yeer oh). Since I try to avoid white flour, I just ate the filling out of it…and the salad idea was born.

Zesty Greek Salad

This quick salad is a mix of favorite greek flavors & easy to throw together.
Ingredients
  • Organic spring mix
  • Feta cheese
  • Tomato, diced
  • Kalamata olives, sliced
  • Vidalia onion, diced small
  • Tzatziki Sauce
Instructions
  1. Pull out desired amount of spring mix.
  2. Top with feta, diced tomatoes, sliced olives.
  3. Dress with homemade tzatziki sauce
Notes
The Tzatziki sauce was very easy to make. I googled many of them, and came up with my own combination. Such a tasty, refreshing dressing! I mixed together ½ cup plain, full-fat yogurt, ½ cup full-fat sour cream, 1½ Tbsp lemon juice, 1 Tbsp minced garlic, 1 cucumber (seeded & sliced thinly, then diced), 1 tsp olive oil, sea salt and pepper to taste. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Most recipes included 5 to 6 mint leaves, minced. Some didn't include them. I didn't add any since I didn't have them on hand. Adding them would make it more traditional, but it was still very good. As with most dressings and dips, taste is more prominent after it's been in the fridge for awhile or overnight. ENJOY!!
