Kavli breakfast or tea time snack

This morning I was in the mood for something different….different from the scrambled zucchini eggs I’ve been eating recently. Don’t get me wrong they’re good, in fact I’ve recently turned my kids onto them. No small feat where green veggies are concerned, but today I yearned for something sweet. And though scones were fresh on the brain from yesterday, I didn’t want that temptation in the house right now.

I’ve been trying to eat low carb since we came home from vacation…trying to finish taking off the last of the holiday pounds. I remembered I had these Kavli crispbreads in the pantry. At only 50 calories for three crackers, they are good for every diet. The carb content is low as well…only eight carbs for all three. They’re tasty too and always help with a carb craving.

I spread them with cream cheese, added a small bit of Polaner fruit only blackberry jam and topped with half a slice of Havarti cheese. I did add a smidge more jam to the top before popping them in the toaster oven. 2 to 3 minutes later, it was ready to eat!

As I sat eating my new treat and sipping my hot tea, I remembered a breakfast years ago in Paris. Before kids, my hubby and I backpacked across Europe for a month….The Netherlands, France, Germany, Spain….ah, good times! Frequently the hotels seemed more like rooms in someone’s house…similar to our bed and breakfast. The morning in mind, we shared a communal breakfast in a room with other guests. There was no waffle maker or hot foods that I remember, but plenty of crispbreads, jams, jellies, fruit, cheese, tea and coffee. I’ve found simplicity in foods really helps fuel me for the day whereas a carb heavy pancake or waffle would leave me wanting for a few more hours of sleep. 😉

A tasty low carb breakfast treat or snack.
Ingredients
  • 1 Kavli crispbread
  • 1 Tbsp cream cheese
  • ½ tsp Polaner all fruit blackberry jam
  • ½ slice havarti cheese
Instructions
  1. Spread Kavli crispbread with cream cheese.
  2. Spread on most of jam.
  3. Top with the half slice of havarti cheese.
  4. Spread remaining jam onto cheese.
  5. Place in toaster oven or under broiler for 2 to 3 minutes until bubbly and toasted.
  6. Enjoy with a nice cup of hot tea!
