A peanut butter butterfinger pie for Mikey

Two weeks ago today most of the food blogging community received some devastating news about one of its own. That particular day was a busy one for me….I was celebrating my mom’s 60th birthday with her, so I didn’t receive the news until Tuesday, August 9th. I grew concerned when I saw a post titled Hurting on my friend Merry Jennifer’s blog. You may remember that she and I met at Food Blog Forum last April.

As much as I love Twitter I’m surprised I didn’t catch the news there, but over the summer I haven’t been as active on twitter as I normally am. So I began reading Merry Jennifer’s post with baited breath and an anxious heart. It seemed cryptic at first and I was trying to figure out who she was talking about. And then there it was…..Jennie’s tweet referenced in a linked blog

He’s gone. And my heart is shattered into a million pieces.

…..“Oh no….it can’t be,” flitted through my mind. Not her. Jennifer Perillo of In Jennie’s Kitchen is a Twitter friend, a very gifted writer and though we’ve never met in person I feel like I know her….we have so much in common.

Jennie’s blog is one of my very favorite blogs to read. Just a few weeks ago after returning from my vacation, I settled in with a cup of tea and Jennie’s blog to catch up on what she’s been up to. I settled in to relax since every word of hers soothes and inspires the soul at the same time. Jennie and I have very similar food philosophies, and my two youngest daughters are the same age as her two girls. By the end of that marathon session at Jennie’s blog, I had made notes to myself to feature her blog on Creative Kitchen, and that I wanted to try her 1 minute mayonnaise. And since it uses an immersion stick blender…I put that on my wish list.

It was at that moment that I wished I could travel back in time….back to that day of sipping my tea and relaxing In Jennie’s Kitchen…..because then her husband and best friend Mikey would still be alive. I wish we could take it back. And as much as the news of Mikey’s death shook me to the core, I know it’s a small drop in the bucket compared to Jennie’s grief. No matter how many prayers I pray or how often I think of her, it will be a long time before that grief starts to lessen. And that just makes me cry again….for her and for her precious girls. I hope you will keep them in your prayers too.

As the story unfolded, I learned that Mikey suffered a sudden massive heart attack when out helping his daughter ride her bike. One minute he was helping her, and the next he said he needed to sit….and that was it. He was gone. If you watch the video Jennie posted on her blog One Last Dance of Mikey dancing with their daughter, you’ll notice how fit he looks. He seems the picture of health. It’s just not fair…..so heartbreaking.

Jennie has begun the process of trying to understand what’s happened to her the only way she knows how….writing. In this time of great turmoil and reeling from her loss, she’s managed to share her heart over at her blog and give us a small glimpse of her reality. And because we all love her, we want to know what we can do….we want to help. Jennie I think surprised us all when she said,

“For those asking what they can do to help my healing process, make a peanut butter pie this Friday and share it with someone you love. Then hug them like there’s no tomorrow because today is the only guarantee we can count on.”

And there it was….do what we do best. Do what we know. Get in the kitchen and cook for those we love. Make something special for them. Make this pie in remembrance of Mikey and for Jennie and her girls, and hug those we love close.

I’m really not surprised how the food blogging community has rallied behind Jennie in this time of her grief. I’ve mentioned time and time again how supportive and incredible this group of writers are. But I was still overwhelmed as I saw all these peanut butter pies popping up all over the internet. So many in fact, that many popular websites have devoted entire pages to feature them. A collection of some of the first ones made are featured at Food Network. You simply must stop over and see for yourself. It’s amazing!

I’m a little late in the game with my pie for Mikey….but I know Jennie will understand. That Friday August 12th when they gathered to celebrate Mikey’s life….the day most made their pies for Mikey….I was unable to get in the kitchen. I put the pie on my list because I was busy with the other part of Jennie’s wish…..spending time with those we love.

My brother had flown down to spend some time with my family. My mom, brother and I are in the process of learning our new normal. My father at the young age 59 was diagnosed with early onset dementia last year. My brother flew down to spend some quality time with my dad while my dad still knows who he is. We shared a wonderful 4 days, family meals and took family pictures of the four of us. We made memories together.

Last Thursday night my hubby, girls and I went out to buy the ingredients for this pie.I decided on a peanut butter butterfinger pie since Butterfinger is my husband’s favorite candy bar. It just so happens that peanut butter and chocolate is his favorite combination. I don’t make treats for him nearly enough because we really try to focus on healthy eating. But you know I’ve been thinking….if he wants a treat, he buys a treat….and how much better is a homemade treat?

I’ve been hugging my husband tighter these past 2 weeks. I can’t even begin to comprehend what Jennie’s going through, because I’ve never walked in her shoes. But I did almost lose my husband before we were married. Not quite 5 years after meeting, and just 22 months after we’d found each other again, he almost died in a near fatal car accident. It’s a story I’ll save for another time, but it was serious. He lost over half his blood, spent 3 hours in exploratory surgery, 3 days in ICU and 8 days in the hospital. It was the worst 8 days of my life wondering if he was going to make it.

I got “the phone call” that he’d been in an accident, and for almost an hour I pleaded with God to spare his life while waiting on a ride to the hospital. We were in college, and I was stranded babysitting someone’s kids. He had just dropped me off, and then it happened. The day before cell phones were in everyone’s hands….December 13th, 1994.….a day I’ve never forgotten, remember every year….and every year I thank God that he spared his life. I thank God for my 3 precious girls, and the family we have that would have never been.

But as traumatic as that day was, it also a gift. From that day forward I’ve never taken a minute with my husband or my girls for granted. And though I’ve had to battle certain fears that it instilled (namely I‘m very strict about who drives my kids since I fear that phone call again), I’m more thankful since it’s given me the gift of always living in the moment….making every moment count….grateful for the day we’ve been given and very aware of the words Jennie uttered,

“because today is the only guarantee we can count on.”

A peanut butter butterfinger pie for Mikey

Serves: 8
 
Ingredients
  • Graham cracker crust or make own
  • 8 oz package cream cheese, softened
  • 1 cup organic peanut butter
  • 1 cup powdered sugar
  • 1 cup chocolate chips, melted
  • 1 tsp vanilla
  • 1½ cups whipped cream, homemade
  • 3 butterfinger candy bars, crushed
Instructions
  1. Melt chocolate. Pour ½ of melted chocolate onto crust and refrigerate. Set other half aside.
  2. In mixing bowl, mix together cream cheese and peanut butter till fluffy. On low add in powdered sugar and mix till blended. Add in rest of melted chocolate and vanilla.
  3. Fold in whipped cream and 2½ bars of crushed butterfinger gently. Reserve ½ candy bar.
  4. Spread mixture into crust and top with ½ crushed candy bar. Freeze for 2 hours and then serve. Can store in refrigerator or freezer.

Cucumber Avocado Salsa Dip

Let’s see if I can actually get out a quick recipe for you all today. I want to share this refreshing cucumber avocado salsa dip with you, so I’m back as promised. My biggest downfall as a food blogger is that no matter how prepared I am for a post with pictures, recipe and what not…sometimes I sit down to write and I go in a completely different direction. Or the editing over and over again to get it “just right.” It pains me to see that after all these years thinking I was a “reformed perfectionist” that she is still lurking down there somewhere. Sheesh….can I just write up a recipe & share it already?

When I stumbled upon this cucumber avocado salsa a while back it sounded refreshing and intriguing. I love any type of salsa and spicy food! It really was good as a salsa, but I changed it up a bit by making it into a dip. Since my low carb experiment, I’ve been eating more and more vegetables. I’ve always eaten a variety of veggies, but now it’s like I crave them! See if we cut back or take out the sugar, refined flour products and focus on REAL food….flavors will burst in your mouth like never before. It’s amazing how our taste buds change when they aren’t dulled by fake foods. You have to admit how much your better your body feels when you’re eating REAL food versus the junk. Right? You have more energy, think clearly and just overall feel better!

Cucumber, celery, cabbage, zucchini, and sugar snap peas are now permanent fixtures in my fridge whereas before they were maybe once a year visitors. 😉 Never realized the peppery bite and wonderful crunch of celery until I needed to find a substitute scooper of dip. Now I prefer it over anything else with buffalo chicken dip. It just pairs so nicely. Just like I was pleasantly surprised to find out how well this dip goes with my taco omelette. Ever since I tried this combination, I just haven’t been able to stop thinking about it!! In fact, I made taco salad last night just so I could have my taco omelette with cucumber avocado salsa dip this morning. YUM! Even if it doesn’t sound like something you’d normally like…just trust me on this! Make it, try it and tell me what you think.

Cucumber Avocado Salsa Dip

This refreshing dip or dressing is quick, easy and tasty! It's a nice complement to a variety of mexican dishes (tacos, nachos, burritos and even my taco omelette!)
Ingredients
  • 1 cucumber, seeded and diced small
  • 1 avocado, diced
  • 2-3 Tbsp vidalia onion, diced
  • 1 lime, juiced
  • pinch sea salt
  • ½ jalepeno pepper, seeded & finely diced
  • ¾ to 1 cup sour cream, full fat
  • 1 - 2 tsp sugar
  • ½ tsp crushed red pepper (or to taste)
Instructions
  1. Combine everything and mix thoroughly. Refrigerate for at least a couple hours to let the flavors marinate.
  2. For original recipe see link above. Originally it's a salsa. I cut that recipe in half except for the jalepeno and then added the sour cream, sugar and red pepper to make it into a dip. It was good before my additions, but I just prefer the creaminess of this as a dip or dressing. It's out of this world on the side of my taco omelette!!
  3. * For dairy-free and vegan, omit sour cream and for Whole 30, Daniel Plan and Daniel Fast omit sour cream and sugar.

My kayak experience & a challenge for moms

You all remember I told you I went kayaking with my brother this past weekend, right? Kayaking is something that always sounded so rugged and outdoorsy to me….actually, it sounded hard! Don’t you think? When I was young…I was a tomboy, and an outdoorsy girl. I spent my summers with my cousins on my grandparent’s farm.

Spending all day barefoot, roaming the mountainside of West Virginia, climbing trees, taking care of farm animals, harvesting vegetables, blackberry picking, pumping any water we needed from the well & and helping my grandpa with all kinds of outdoor tasks was the norm. Back at home I’d spend hours on my bike zipping around the neighborhood till the sky had long turned black. Not a care in the world…….those were the days………

Then I hit my teens….you remember those days? You want your hair just right, and to keep your make up from sliding off your face in the humidity…..so you become an “indoor girl.” At least for the most part I did. I traded my bike in for roller skates and the fresh air for a/c. Sure there were occasional summer days spent at the pool, but it was mainly about coordinating schedules with my BFF to spend as much time with each other and “hang out.”

In my 20’s, I spent plenty of time at the beach or rollerblading, and though I did a 4-year stint in the Navy I still didn’t consider myself an “outdoorsy girl” again. Not until after I became a mom and hit my 30’s. In my 30’s, I got comfortable in my own skin again. I wanted to be outside as much as possible. The beach, boating, running, biking, camping….you name it….as long as I was outside under the blue sky with the trees blowing in the breeze or the nighttime stars. I fell in love again with nature!

So it only seemed natural that last year to ring in my big “4-0 birthday” I’d want to try something new…something I’d always wanted to do in the great outdoors. Kayaking. My hubby and I spent the morning of my 40th birthday in a tandem kayak and I fell in LOVE. I could do this every weekend! Well life happens…..and the holidays….and the weather started getting chilly…even in South Florida. So this past weekend was my first opportunity to get back out on the water….this time in a single kayak for the first time.

I thought it’d be much harder, but was surprised at how effortless it seemed compared to canoeing. Or maybe it’s because after having 3 children….we moms just don’t notice a little extra effort exerted in order to have peace, tranquility and relaxation. We were only out there for 2 hours, but I could have easily stayed out for 4-5. If you haven’t tried it….you must! And tell me what you think.

So I’m making a promise to myself…..I’m getting back out there on the water at least 2-3 more times (hopefully more) before November rolls around. Fortunately for me living in South Florida…the weather is on my side. Aug, Sept and Oct are our hottest months. And between my hubby, my girls, my mom and a whole crew of girlfriends….I think I’ll have plenty willing to join me.

My challenge to you? Get out there and do something new….something you’ve been wanting to try for awhile. Stretch yourself…..get out of your comfort zone a bit. Not only will you have fun, but you’ll rediscover “youth” again….a taste of your childhood. And that’s something hard to come by.

Taco omelette and other random bits

It’s been a busy fun few days. My brother flew down from North Carolina last Thursday to visit, and we sure did fit quite a bit in. Like mom and I, he loves the ocean….so he spent everyday getting a dose of salt, sand, and surf. One of the highlights of his visit was that he and I went kayaking in the Intracoastal waterway. I love kayaking, so it was nice to create that memory with my brother (who also loves kayaking). He’s a busy dad of identical twins who works full-time and also attends graduate school, so I’m sure you can imagine what a treat it was to spend time with him.

So what’s a taco omelette? I’d never heard of one either till it all came together in my skillet one morning last week. I had some leftover taco meat I was intending to use for a taco salad. Love taco salads! But this particular morning I spied it in my fridge as I was throwing an omelette together. Taco meat, diced onions, mexican cheese, jack cheese, diced tomato, and crushed red pepper. Oh yes….that will be GOOD!

And not only was it good….it was beyond amazing when I added a dollop of cucumber avocado salsa on the side. I could eat one of these everday. In fact, I want one right now! This omelette is good alone, but the cucumber avocado salsa takes it over the top. I’ll share that recipe later this week….promise.

A few random bits for you ~

  • my mom turned 60 last week and she & I celebrated at one of her favorite restaurants (I’ll be sharing about Christopher’s Kitchen and their amazing raw vegan food soon). We had a great time!
  • my oldest 2 daughters (ages 12 and 8) did well on their homeschool evaluations. I can’t believe they’re going into 7th grade & 3rd grade, respectively. Did you know I homeschool my girls? I have one in middle school, one in elementary and one in preschool. I’m so proud of them!
  • a couple weeks ago my 3 year old stopped wearing a diaper at night and is now completely potty trained. Yay…..we’re done with diapers forever!
  • one of the fish in our aquarium is in distress. We’ve researched it, checked the water quality and there seems to be nothing we can do. This part is very hard for me…a fish slowly dying….it breaks my heart.
  • Ruby seems to be growing on me (can you believe we’ve had her 5 months already?)…I’ve even cleaned her cage solo the past 2 weeks as a kind gesture to help my hard-working hubby. He was SO appreciative! I know….don’t make it a habit. 😉 I do have to say….she’s a pretty easy pet as far as pets go.
  • there aren’t enough hours in the day or week….but I’m sure I don’t have to tell you that. I’ve been very intentional about spending quality time with my girls this summer. They grow up so fast!! And now my 3 year old is learning how to play Wii…how is that possible? We’ve had such a great summer….bonding on our trip and girl time. I plan on keeping up with that.

A food blogger’s trip to the library

As much I enjoy reading food blogs, and I’m really quite addicted…..there’s nothing quite like the feel of a book in your hand. The instant relaxation you feel when settling down with a book and a cup of tea. The glossy photos inspire, and it’s always a nice break for a blogger to be “unplugged.”

Last Sunday our family made a stop at the library on the way home from church. It’s been great now that my 3 1/2 year old is getting old enough to calm down a bit when at the library. Her walking is still a a bit like running, but between the 4 of us juggling taking turns with her we can all get in a bit of time to browse and select a few books to take home.

I’ve been quite impressed with the cookbook selection since our library reopened last fall (they were closed 1 1/2 years for a major renovation and addition which sent us to a library almost as close, but with a parking lot that was an accident always waiting to happen). Let’s just say I was beyond thrilled when our library reopened!

Last week I picked out many cookbooks and foodie books to peruse over the next few weeks at home, so my plan was to head straight to the kid section with the little one. But I just couldn’t help myself….first a quick stop to look through the “new 14-day book” selection to see what’s new. You know, the newest books published? It’s the section where I checked out As Always, Julia: Letters of Julia Child & Avis DeVoto last month……..

Of course I checked out 3 more books! Take a peek at my choices, I’m sure you’ll agree…

Jamie’s America: Easy Twists on Great American Classics, and More

This book was a pleasant surprise. Though I think highly of Jamie Oliver and his Food Revolution, I’d never picked up or looked through one of his books. What I love about this book is that it’s an “eye on America” from an outsider. Jamie is excited about his trip across America, and takes the reader along with him.

It’s more than a cookbook……we get to travel and learn about the people and food in five distinct areas of our country: New York, Louisiana, Arizona, Los Angeles, Georgia, and the Wildwest (Wyoming). It’s so cool! His enthusiasm throughout the book as he explores other cultures is evident and refreshing! I’ve got a list of recipes I can’t wait to try, and they all seem easy and tasty. How does Jewish Penicillin sound? It’s a chicken matzo ball soup and looks incredible!

Barefoot Contessa: How Easy is That?

What I love about Ina Garten’s books is the “I’m on vacation” feeling I get when I read and browse through them. All the photos are gorgeous, and her food is fresh with simple wholesome ingredients usually straight from the farm. She shares some great ideas for entertaining in this one. And again….I have many recipes I can’t wait to try.

Gluten-Free Girl and the Chef

I was very excited to run into fellow food blogger Gluten-Free Girl Shauna Ahern’s new cookbook! Even if you’re not celiac or have to eat “gluten-free” this cookbook is worth reading. Being diagnosed with celiac did not discourage Shauna in the kitchen…instead her love of food grew as she discovered a new way of life.

I’m thoroughly enjoying learning more about the trials of those that have to live gluten-free, and her love story is fun too! Doesn’t this tagline grab you….”What happens when a successful chef falls in love with a gluten-free girl?” I’ve often been drawn to the science of gluten-free baking, and she describes each of the flours that make up a gluten-free mix in detail.
